Morningstarfarms.com , click on recipes. They have a "meatless loaf" that uses their veggie crumblers. It's very good, if you're trying to mimic real meatloaf.

I love this recipe:
Tofu Loaf
Ingredients:
1 medium onion
1 cup whole grain bread crumbs
1 pk Firm tofu (medium will do)
1/2 cup chopped fresh basil
2 tablespoonketchup
2 tablespoon Dijon mustard
1/2 teaspoon sage
1-2 cloves garlic
Directions:
1) Preheat oven to 350 degrees fahrenheit
2) Mix all ingredients together. Don't use a blender. You don't want to puree the bread crumbs. You can blend everything in the blender then add the crumbs after if you like.
3) Lightly oil a loaf pan, and pour it all in.
4) Bake for about 50 minutes
5) Let cool about 15-20 minutes before trying to remove from pan.
6) Slice and enjoy!
This is great on sandwhiches. Or with a side of steamed veggies. It makes a pretty small loaf but if you try to double the recipe it's harder to cook.

I just read about this one in a magazine:
Sunflower Seed Loaf
1/2 c raw sunflower seeds, ground in blender
2/3 c. walnuts, ground
3/4 c bread crumbs
1 med. potato, raw, shredded
1 c nut or soy milk
1 garlic clove, chopped fine
1 small onion, chopped fine
1 tsp sea salt
1 Tbsp Bragg's Liquid Aminos (soy sauce replacement)
1/4 tsp sage
1/4 tsp garlic salt
Mixx all together in a large bowl. Grease loaf pan with olive oil or cooking spray, and pour mizture into it. Cover and bake 45 minutes at 350 degrees. Uncover and bake 15 minutes more. Serves 6-8
The article was an interview of Nyse Collins who is a health consultant in GA. In the article it says, "this loaf is so good that people often comment, 'Weren't you going to cook a vegetarian meatloaf?'"
I haven't had a chance to try it, but it's in my plans.

A very simple vegetarian meatloaf can be made using "Gimme Lean". They sell it at many grocery stores in the produce/vegetarian food area. I just add a little ketchup to it, mix it up, and put in loaf pan and cover with a little more ketchup and french fried onions and bake about a half hour at 350F

I make meat balls like this but you could just use more ingrediants and makea meatloaf.
half an onion
one stick of celery
half a large carrot
three or four mushrooms
garlic
fresh and dried parsley
one chilli
half a cup of bread crumbs
cream or if vegan soymilk, about third a cup
Stock powder,
about a third of a spoon of sugar
TVP (textured vegetable protien) about two thirds of a cup.
One egg (optional)
One or two spoons of corn flour
Soak TVP for aprx 15 minutes in a bowl of hot water and a spoon of stock
In a seperate bowl mix bread crumbs and cream/ soy milk.leave to stand.
fry onion, garlic, chilli and dried herbs.
Add celery, mushrooms and grated carrot and fresh parsley.
Add stock, about a teaspoon. salt, pepper and sugar.
Remove from heat.
squeeze the water out of the TVP ,add to onion mixture,
add bread crumb mixture and corn flour.
Squeeze out any extra moisture, form into shape on a baking tray. Id keep it long and skinny rather than a short fat shape.
Coat the outside with a decent amount of olive oil, and bake at a high temperature till you see a few brown edges.
You should try it as meat balls in tomato sauce its delicious.
Sorry if this is hard to follow I have made this up my self over time and never written it down before.
