& food promotions on my own; i have organised & done Indian & Thai food promotions. Recently i have done one of each in spain which were a huge success& doing another one soon there. I am looking for more options/ chances of doing more stuffs like this. How or whom should i contact ?

They are very good at "showcasing" chefs.

I am a former chef in Canada and know the business the same way you do, with the globalization of cuisine, African and South American might be a new twist.

Mexican is something that Europe is still finding to be a hidden gem, especailly the traditional cuisine not the Yankees greasy fast food style. It is a cuisine rich in seafood, fresh vegetables and various types of chilis and spices.

It might be the next craze in the EU, African like Ethiopian, Ghanan and Egyptian are something like Morrocian that is more of a favorable taste to most of the countrys in Europe.

I worked in Canada for 20 yrs and in Jamaica, serving continental and European cuisines, plus I did cook most of the Asian cuisines, and they are always something people are willing to experiment with.

Usually 5-star hotels in holiday resorts are happy to have guest chefs to showcase their specialties on an occasional basis.It also helps enetrtain the guests.
Once you get on this circuit, I am told, it's easy to keep at it.
Look at China as well, the hotels there are desperate for "foreign" chefs.
