i thought of salmon koshimbir; but salmon as an Indian dish... didnt wanna use it

how about goan style crab cakes or fish cakes?

I dont understand, you said "no fusion" but were suggesting salmon koshimbir, isnt that fusion?

how about fish kappa (tilapia works well). Bite size pieces lightly coated with spices & rice flour, then lightly pan fried.

Smoke some mackerel. Then flake it, and add some curds and finely chopped dill. Sprinkle a pinch of Bolst's Madras Curry powder on top.
Serve in a ceramic chinese soup spoon.
