vegan sugarless fruit cake

Not twice as long but it will need longer than if you hadn't doubled it. The top might start browning a bit too much because of the longer cooking time- it this happens, cover the top with greaseproof paper/baking parchment and carry on baking it.

If you double the recipe then you would also need to use a bigger pan. You would go from a 9x9 to a 9x13 size. So that should solve the problem. I know that with bars I never have to bake longer even if I triple the recipe.
Try to bake it as long as original recipe and then do the fork test and if it needs more baking just leave it a bit longer.

Cakes are finicky; you might want to just make two cakes.
By doubling the size, you could find yourself with a very gooey middle and an extra crispy outside.

If you want a bigger cake, turn the stove down and cook it for longer, checking the inside with a tooth pick. It will probably take quite a bit longer, but lowering the temperature gives the inside time to cook without burning the outer layer.

Bake it for about 10 minutes longer and then test it with a fork. The fork should come out clean. Until it does, keep baking it!

you don't double the time, you just double the amount of the ingredients, let's say 1 cup of fruits, you double it by putting 2 cups.

no. i don't know the formula but its an extra so many minutes for so many extra ounces pounds or whatever...
think of it this way, one hotdog in the microwave for 30 seconds
2 hotdogs for a minute and there burnt.
