For 1 lassi:

1/2 cup mango pulp (get at an indian food store) or 1 fresh mango. If its too ripe the mango will be fibrous and burn your mouth!
1/2 cup plain yogurt
2 teaspoons rosewater (indian market)
Honey to taste (dont use sugar... bleh!)
1/3 cup ice cold water

Mix or blend and youve got yourself one great mango lassi!

This Indian drink is like a mango milkshake and is delicious.


9 fluid ounces (255 milliliters) plain yogurt
4 1/2 fluid ounces (130 milliliters) milk
4 1/2 fluid ounces (130 milliliters) canned mango pulp or 7 ounces (200 grams) from 3 fresh mango, stoned and sliced
4 teaspoons sugar, to taste, or feel free to try salt and cardamom seeds

Put all the ingredients into a blender and blend for 2 minutes, then pour into individual glasses, and serve. Feel free to try salt and cardamom seeds. The lassi can be kept refrigerated for up to 24 hours

OR

1/2 chopped ripe mango
1 cup low-fat plain yogurt
1/4 cup freshly-squeezed orange juice
2 tablespoons Spiced Simple Syrup, recipe follows
Pinch fine salt

Puree all ingredients in a blender until smooth. Refrigerate until ready to serve.

Spiced Simple Syrup:
1/2 cup granulated sugar
1/2 cup water
4 green cardamom pods, cracked
2 allspice berries
1 cinnamon stick
1 whole clove

Put all the ingredients in a small sauce pan, and bring to a boil, stirring occasionally. When sugar is dissolved, remove from heat. Cool, strain, and refrigerate.
Yield: about 2/3 cup

Lassi is a delicious yogurt drink which can be flavoured in a variety of ways,fruit flavors are gaining popularity,mango is particularly delicious.One does not have to be all that careful with measuring up in ingredients, a little more or less of a given ingredient does not make an awful lot of difference .
Simply blend together half a glass of natural yogurt with about a quarter of a glass of milk,add anything between half to one cup of mango pulp,sugar enough to sweeten,& a good handful of ice cubes,blend,pour out & serve.

1 C plain yogurt
1/2 of a medium ripe mango, diced
2 Tablespoons sugar
8 ice cubes

just combine all of the ingriedients in a blender until its smooth

and if you want you can take out the lumps by putting it through a stainer and squeezing out the juice with a spoon

easy: mango & yogurt. It'a an Indian smoothie. If you are really decadent: a pinch of saffron.

if the mango is sweet, you dont need to add an extra sugar
