SAFFRON RICE WITH CHORIZO
1/4 cup olive oil
1 large onion, chopped
1 large red bell pepper, chopped
3 large garlic cloves, minced
2 cups long-grain rice
1/4 pound smoked, fully cooked Spanish chorizo or pepperoni, cut diagonally into 1/4-inch-thick slices
4 cups canned chicken broth
1/4 teaspoon (scant) saffron threads
Salt and pepper
1/4 cup minced fresh parsley
Heat oil in heavy large saucepan over medium heat. Add onion, bell pepper and garlic and sauté until vegetables are tender, about 6 minutes. Add sausage, broth and saffron and bring to boil, stirring occasionally. Reduce heat, cover and simmer until rice is tender, about 15 minutes. Remove from heat. Let stand 5 minutes. Season with salt and pepper. Mix in parsley and serve.

Spanish rice
1 tablespoon olive oil
1/2 pound hamburger
1 yellow onion, peeled and coarsely chopped
1 green pepper, cored and coarsely chopped
1/2 teaspoon chili powder
1 1/2 cups water
1/2 cup tomato sauce
1 tablespoon butter
1 cup converted rice
2 tablespoons Worcestershire sauce
1/4 teaspoon Tabasco
1/4 teaspoon whole thyme leaves
Salt and pepper to taste
Heat a 2-quart Dutch oven and add the oil, hamburger, and onions. Saute until the meat browns and falls apart and the onions are clear. Remove excess fat from pan and add the green pepper and chili powder. Saute an additional 5 minutes. Add all remaining ingredients and bring to a boil. Cover the pan and cook over low heat for 25 minutes, or until the rice is tender

in a 9-10" frying pan melt 1-2 tablespoons of butter or margarine "your preference"over med flame, do not let butter or margaringe brown,when melted pour one cup of long grain rice preferably la preferida rice "my preference"stir until almost brown, add 1-small to medium chopped onion, add 1/2 a jalapeno pepper if you prefer, 1/2 teaspoon salt, 1-2 teaspoons polvo de cominos or in english cumin powder, 1-2-clovers of garlic finely chopped, or minced garlic what ever is on hand and 1-packet of sazon by goya con cilantro and achiote this is a seasoning packet, if you cant find this exact seasoning any sazon by goya brand will do, now you stir all these ingredients together with the rice while it is browning, when it is almost light to med brown add 1-2 cups of chicken broth any brand will do,i like the swanson brand my self, just remember that the liquid should not pass more than 1/2"-3/4"over the top of the rice, turn flame to high and bring to boil, when it comes to a boil lower the flame to simmer, give on to two good stirs cover and simmer 20-25min.do not peak that just makes it take longer to cook, when done fluff with a fork and eat. just remember patience is a virtue, and let me know how it came out

you rinse about 4 cups of rice.
when it has drained, then you fry it in about 1 tablespoon of oil.
until it is light brown.
you add garlic powder then a small can of tomatoe sauce and mix it.
then you add water until the water is right above the rice.
add about a table spoon of salt and knorr tomatoe cube
when water is dries if rice is still hard add a little more water.
