TACO SALAD
1 lb. ground beef
1 envelope taco seasoning mix
1 head of lettuce, cut in long lengthwise strips
3-4 sliced scallions
3-4 diced fresh tomatoes
1 cup shredded cheddar cheese
1 cup corn chips
fat free Catalina salad dressing
tortilla bowls (optional)
Brown ground beef in a skillet, drain fat, add taco seasoning mix and prepare as directed on package. Set aside.
In a large salad bowl combine: cut lettuce, sliced scallions, diced tomatoes, shredded cheese, seasoned ground beef, corn chips, and salad dressing.
Toss gently and serve immediately in tortilla bowls.
This taco salad is very easy to make and very good to eat.

These are really fun to make and eat...also combines many favorites...taco crunch and look with a Mexican salad look.
You can also substitute chicken for other meats...carne asada...or other types of ground beef. Yummy...
CHICKEN TOASTADAS
2 chicken breasts, skinned and boned
2 c. chicken stock or canned broth
1 1/2 tsp. ground cumin
3/4 tsp. chili powder
1 (8 oz.) can tomato sauce
1/4 tsp. salt
1/8 tsp. black pepper
1 sm. onion, diced
1 lg. tomato, diced
3 c. shredded lettuce
1/2 c. shredded low-fat Cheddar or part-skim Mozzarella cheese
6 (8 inch) flour tortillas, warmed
1 c. black bean dip
In a 2 quart saucepan, bring chicken and chicken stock to boiling. Reduce heat and simmer 20 minutes or until chicken is done. Remove chicken from stock. Dice and sprinkle with 1/2 teaspoon of the cumin and 1/2 teaspoon of the chili powder.
In a small saucepan, combine tomato sauce, the remaining teaspoon of cumin, the remaining 1/4 teaspoon chili powder, salt and pepper, and warm over low heat.
Arrange chicken, onion, tomato, lettuce and cheese on a serving platter. Place warm tortillas in a napkin-lined basket, and put tomato sauce and black bean dip into serving bowl. Makes 6 servings.

Ingredients
(4 servings)
6 Eggs
4 Corn tortillas
2 Avocados
2 Tomatoes
4 tb Lime juice
4 ts Olive oil
Salt and pepper to taste
2 tb Butter or margarine
2 Onions; finely diced
1 c Cooked beef, chicken or pork (diced or shredded)
1 ts Chili powder
1/2 ts Ground cumin
Cilantro
Instructions
BREAK THE EGGS in a mixing bowl and beat them lightly. Cut the tortillas into eighths and add to the eggs. Let sit 15 minutes. Cut the avocados in half from tip to stem, and remove the pit. Using a paring knife, slice the flesh in each half from tip to stem in 1/2-inch slices without cutting through skin. Using a large spoon, scoop the flesh out of the skin in 1 piece. Lay cut side down on each plate and fan out the slices. Cut the tomatoes into slices and lay slices next to the avocado. Drizzle with lime juice and oil, and sprinkle with salt and pepper. Heat the butter in a large skillet over medium heat and add the onion, chili powder and cumin. Cook, stirring occasionally, 5 minutes. Add meat; cook just until warmed. Add the beaten eggs and tortillas and cook, stirring, until eggs are cooked to desired doneness. Arrange a mound of eggs on each plate next to the avocado and tomato. Garnish with some cilantro. Serve immediately.

Mexican Rice
1 cup long grain rice
1/4 cup chopped onions
3 TBSP vegetable oil
1/2 cup tomatoe sauce
1/4 tsp cumin
1/4 tsp garlic powder
1/2 tsp salt
2 cups chicken stock
Saute onions in oil for 3 minutes, add rice and saute until golden. Add cumin, garlic powder, and salt. Slowly pour in stock and tomatoe sauce. Bring to a boil, then lower heat to low and simmer for 20-25 minutes.
This make very good rice and it is very easy.

MEXICAN CASSEROLE
1 can Spanish rice
1 can Ranch style beans
1 lb. hamburger
1 c. cheddar cheese, shredded
Sour cream
Picante sauce
Tortilla chips
Fry ground beef in a skillet then drain off the grease. Then add the Spanish rice, the Ranch style beans and the cheddar cheese. Heat it up until the cheese is melted. Place into a casserole dish. Sprinkle top with grated cheese. Place in oven until cheese is melted. May top with sour cream and picante sauce to taste. May serve with tortilla chips.

1. Mexican Manicotti
1 lb lean ground beef
1 (16 ounce) can refried beans
3 teaspoons chili powder
3 teaspoons oregano
1 (8 ounce) package manicotti
2 1/2 cups water
16 ounces picante sauce
16 ounces sour cream
1 cup shredded monterey jack cheese
1/4 cup sliced green onions
1/4 cup sliced ripe olives
In bowl, mix uncooked beef, beans, chili powder, and oregano.
Spoon into uncooked manicotti shells.
Place in greased 13x9 baking pan.
Mix water and sauce, pour over manicotti.
Cover and refrigerate 8 hours.
Remove from refrigerator 30 minutes before baking.
Cover and bake at 350* for 1 hour.
Uncover; spoon on sour cream.
Sprinkle with cheese, onions, and olives.
Bake for 8 minutes more.
2. Mexican Lime chicken
2 chicken breasts
1 tablespoon brown sugar
1 lime
2 tablespoons olive oil
1 teaspoon coriander, ground
1/2 teaspoon paprika
6 cloves garlic, unpeeled
2 red chilies
Mix olive oil with coriander, paprika, sugar and the zest of the lime.
Cover chicken breasts in marinade, squeeze juice of 1/2 lime over the meat, and place in fridge for at least 30 minutes.
When ready to bake, place chicken breasts in a baking dish and place 2 lime slices under the skin of each breast.
Place garlic and chillies around the chicken and roast for 30-35 minutes at around 375 F or 190 C.

Tamale pie
12 green sauce tamales
1 chicken breast cooked and shredded
1 can green salsa
sour cream
grated mozzarella cheese
arrange tamales in a greased Pyrex, add chicken, enough salsa to cover them (do not soak), cheese and cream. reheat in oven until cheese is melted. serve with refried beans.

I have something easy and delicious I learned from a mexican friend. its called crab salsa.
CRAB SALSA
you will need:
-cooked peeled shrimp
-imitation crab
-2 large tomatoes
-cilantro
-white onion
-tostadas(of any kind)
-limes(for squeezing on ur tostadas)
cut up the shrimp and crumble up the crab. put in a large bowl. chop the onion, cilantro, and tomatoes. mix it all toghther. then top the tostada with the crab salad and cut up a lime and squeeze lime juice on it. enjoy!
