Here's a quick one, followed by one of my favourites...


Pasta with Pesto & Capers

1 tbsp garlic
2 tbsp balsamic vinegar
Olive oil
1 jar good quality pesto
½ jar capers
½ jar olives
1 punnet cherry/grape tomatoes
1 cup grated pecorino/parmesan cheese
1 500g packet egg fettuccine

Put pasta on to boil. While it is cooking heat olive oil in fry pan and add garlic. Cook for one minute and add capers and olives. Fry for about 5mins. Add tomatoes on high heat to blacken a bit.
Mix pesto through cooked pasta.
Add balsamic vinegar to tomato mix and mix though briefly. Pour mixture on top of pasta and mix through gently. Add cheese and mix through. Serve.





Peanut Soup

1 tbsp garlic
2 teasp chilli
Olive oil/Coconut oil
2-3 cans crushed tomatoes
3 heaped tbsp peanut butter (extra crunchy)
6 Boiled eggs
1 can kidney beans
1 red capsicum
1 green capsicum
500g okra
2 cups medium grain rice

Set the eggs to boil while prepping other ingredients. Chop onions roughly and fry in the oil. Once onions are clear add chopped capsicums, okra and kidney beans. Add some extra oil for the okra as it soaks up a lot. Add garlic and chilli and fry for about 5mins. Add tomatoes and bring to a simmer with lid on.
At this time take eggs off heat and peel. Set rice to boil.
Add peanut butter to sauce and stir through to dissolve. Add salt/pepper and peanut butter to taste. Add eggs.
Serve on top of boiled rice.

Stuffed zucchini are easy and cheap. Split the zuchs in half lengthwise and par boil them for a few minutes to soften them up. Run cold water over them after you remove them from the boiling water and scoop the insides into a food processor with a teaspoon. Add some breadcrumbs, an egg or two and any kind of cheese you like. If you have leftover rice or green beans you can throw a few of those in too. Actually, you can add whatever you have in the fridge that sounds good or nothing at all. Whip it around in the processor and add a bit of olive oil and whatever seasonings you like, I like garlic salt and cayenne pepper. Place the scooped out halves in a shallow baking dish and add maybe a 1/4 inch of water. Place the stuffing mixture back into the zuchs and pop them into the oven for about 45 minutes at 325.

Comfort Casserole

Ingredients (use vegan versions):

1 cup cooked white beans (although any would probably do)
I carrot, sliced into coins
about 4 mushrooms, sliced
1/4 cup greens beans, chopped to about 2 pieces
about 3 tablespoon parsley, chopped
any other veggies you want, chopped
1 cup non-dairy milk (oat is good)
1 tablespoon + 1 teaspoon whole wheat pastry flour
1 tablespoon yeast
a few dashes EACH sage, rosemary, thyme, and paprika
a dash of cayenne pepper
salt and soy sauce to taste
about 1/4 cup whole-grain bread crumbs



Preheat oven to 350 degrees Fahrenheit. Saute the carrots, mushrooms, green beans, and any other veggies you want to add in a small amount of oil, water, or veggie broth until they just start to get tender. Add white beans and parsley, remove from heat, and set aside.

Whisk the remaining ingredients (milk through soy sauce) together in a small saucepan. Bring to a boil and stir constantly until thickened.

Combine the sauce with the veggie/bean mixture and pour into a lightly oiled baking dish. Sprinkle with bread crumbs. Bake about 20 mins. or until top is browned

Shepard's Pie

1 cup dried lentils (green or brown), or 2 cups cooked lentils
1 large yellow onion, chopped
2 carrots, chopped
1/2 cup celery, sliced
2 cloves garlic, chopped
Olive oil for sauteing
1 tsp mixed dried herbs (marjoram, thyme, basil, sage--your choice)
One 8-oz can tomato sauce or one 15-oz can tomatoes, chopped
2 tablespoons soy sauce
2-3 tablespoons chopped parsley
Salt and black pepper
4 medium potatoes, cooked and mashed
Paprika
2 tablespoons nutritional yeast flakes

If the lentils are uncooked, boil them in water for 45 minutes. Drain.Preheat oven to 350 degrees. Saute onion, carrots, celery, and garlic in a little olive oil until softened.
Add herbs, tomatoes, soy sauce, lentils, parsley, and salt and pepper to taste. Stir.
Spoon mixture into a lightly oiled baking dish. Spread mashed potatoes evenly over the top, drawing a fork over the surface to make ridges. Sprinkle paprika and nutritional yeast flakes on top of potatoes.
Bake 45 minutes, until golden brown.
