Vegan salsa
4 medium tomatoes, diced
½ red onion, diced
2 garlic cloves, minced
½ cup cilantro, chopped finely
½ jalapeno or chili pepper, minced
1 avocado, cut into small squares
a few squeeze lime or lemon juice
salt and pepper
Place diced onion in a cup of water and let sit for 2 minutes, then drain. In a bowl, gently combine all ingredients. Be careful not to mash up avocado. Salt and pepper to taste.

INGREDIENTS
4 tomatoes
1 green bell pepper
1/2 red onion

2 t sea salt or salt substitute
2 t chilli powder
1 t ground cumin
2 t italian seasoning
1 t paprika (for color)
METHOD
Cut the tomatoes in quarters and the pepper in half. Using a food processor with the "S" blade, add the tomatoes, pepper, onion, and garlic. Process on high for 45 seconds. Add the spices and process for another 30 seconds, until relatively smooth with only a few chunks remaining.
NOTES
Oh, the longer you let it sit - say, covered in the refrigerator - the better it gets. Try to let it sit for at least an hour.

LOL..SALSA is Vegan.
Salsa keeps so making a little more than for 1 serving is fine.
Tomato Chopped, Onion chopped, Jalapenos chopped be sure & take out seeds. little oil,salt pepper, caynene if you like. Let co-mingle for a hour or more..yummy
If you like lots of veggie in your salsa add sweet bell peppers too.

I don't see how salsa would not be vegan. Chop up some tomatoes, jalapeno, onions, cilantro, maybe some garlic. Add in some lime juice and salt
