My son and I have recently converted to vegetarianism. My son, 2 yrs old, refuses to eat meat and I can no longer stomach the smell of beef or chicken (weird huh?). Can you guys please provide me with a few tasty meal ideas???

I'm a mushroom fan. Sometimes for an easy lunch I saute some garlic in a little olive oil on a skillet, add a whole bunch of mushrooms or whatever variety I feel like, add some soy sauce, mix it up, add a little handful of finely chopped walnuts, and then when the mushrooms are nearly done, I add a whole bunch of fresh spinach and toss it till it just wilts. It's easy to add other tender greens or quick-cook stuff like bean sprouts, too.
Also, I started trying non-fat refried beans, mixed up with tender greens, garlic, onions, chopped tomatoes, green chilies, chopped black olives, maybe even chopped avacado, and cheese (or since I'm cutting out dairy slowly, I use some almond cheese and nutritional yeast). I mix it with brown rice.
Peanut(or other nut) butter sandwiches using sliced fruit instead of jam can be enjoyable for kids, since they can put it together themselves and use a variety of fruits.

Vegan Vegetable korma served with brown rice.
1 red and 1 green pepper cubed.
I large par-baked potato - peeled and cubed
1 large onion.
1 medium turnip or swede boiled.
4 medium carrots chopped and boiled.
Olive oil
Brown rice as desired (cooked to your personal taste.)
1/2 tsp garam masala
1/2 tsp Asafoetida
1/2 tsp Coriander
1 Tin of light coconut milk
Pinch chilli powder.
Fry onions and spices in olive oil. Add the peppers and cooked vegetables and stir until cooked through. Add the coconut milk stirring continuously so that it does not separate. Warm through gently the serve on a bed of rice with some warmed pittas if desired!! (if you aren't a vegan like me you could use naan breads instead.)

Well the easiest thing if you dont have time is rice and beans, try switching types of beans. For your child I think they will love it if you pack polenta fries, sweet potato fries, mozzarella sticks and maybe hummus and veggies for their lunch, and for your lunch too!

dip the tufo in sauce, grab some lettus to go with it, and some rice, eat it in one bite, best food ever
do not call it vegetariansism if you still eat fish, you can't eat any
animal, if you want the badge of vegetarian

I am a vegetarian too and yes sometimes I eat seafoods but not everyday.
I love tofu so I use tofu very often in my vegetarian meals.
-Noodles and grilled salmon.
-Vegetable omelettes.
-Jumbo coconut shrimp.
-Crabcakes. Yum. My favorite.
-Spinach lasagna.
-Smoked gouda macaroni and cheese.
etc.
