I need someone to tell me how to make special fried rice,special chow mein,chicken madras,dry spicy chicken and sweet and sour sauce please,a step by step guide would be nice.iI need this because i am moving away and there is no chinese restaurant where i am going and on a saturday night thats what i am going to miss the most!!!!!!!!!!!!!PLEASE HELP

I've got the 2nd one & can recommend it, both books are from the same publisher so are probably similar.

I think if I was to give you recipies for everything tou want I will be here all night so as a starting point I shall tell you how to do good egg fried rice
Firstly get some good quality long grain or basmati rice and boil it in excess water till it is nearly done.It must still just be hard in the middle otherwise you will end up with a sticky duff.Rinse with cold water and strain.The secret is to try and remove the excess moisture otherwise it will not fry properly so you need to allow it to drain for some time and if you can put it in a cold fridge overnight.This will further remove excess water.
Once you have prepared your chinese dishes finish by cooking the rice.You do not need to wash out your wok after cooking your main dishes , just wipe out the inside with some kitchen roll.The tiny bit remaining will add extra flavours.Put some vegetable oil in the wok ( only about one tbs - or it will end up greasy) and put the heat on full blast.You must work quickly for best results.Once the oil is v hot(almost smoking) break in 2 eggs, break them up a bit and allow to cook.They will start to look like scrambled egg.Once they are almost comletely done throw the rice in on top and start turning it over so all the rice gets fried.Try not to break up the egg too much as it is nice to have a few big clumps of egg.This will only take about a minute or two.Finally sprinkle in a little soy sauce just to add a little colour and flavour to the rice.If you put the eggs in after the rice they will just bind all the rice together and you will have fried rice porridge.You should now have some piping hot egg fried rice that is nice and light without any sticking together. Enjoy!

There are as many recipes for oriental cooking as there are cooks in India, China, Thailand, Malaysia, Vietnam and the rest of the world put together. Secret is to experiment until you find something you like and remember how you did it. My recipe for special fried rice is as follows:
Ingredients
Serves 2
1 Cup Basmati Rice
1 Chicken Stock Cube
Half cup frozen peas
2 bay leaves
1 piece cassia bark
Water
4 Green Cardamon Pods
200g finely sliced mushrooms
Turmeric
Vegetable Oil
Method
Basmati rice must be used for this recipe. Add the stock cube, bay leaves, cassia bark and cardamom pods to the water in a large pan. Add 1 teaspoon turmeric powder. Bring the water to the boil and add the basmati rice and peas. Cook for 9-10 minutes stirring occasionally, drain. Remove bay leaves and cassia bark. Pop the cardamom seeds into the rice and discard the husks. Scramble the egg and fry in a little oil, when cooked, break into small pieces and add in the mushrooms. Finally stir in the rice and peas and serve

I am concerned you are asking how to make Chinese dishes then you say in your list chicken madras, which is a Indian dish, so stay with fish and chips, that way you can buy some Pataks sauce from the supermarket and choose any flavour you like to pour over your chips

I can make a good sweet and sour sauce with the juice from a tin of pineapples and tomato ketchup, don't forget to add a pinch of salt. Where are you moving to? No Chinese food? I must tell my Chinese friends about this place.

My own variation on Chinese fried rice:

Sautee some chopped onion and one clove of garlic
Sautee some shrimp (remove tails)
Add cooked rice (no, you DON'T have to make it the day before)
Add soy sauce and a small amount of teriyaki sauce
Add peas, carrots, and fresh sliced mushrooms
If desired, add some ginger and/or chili paste or red pepper flakes for some heat

first, "chicken madras" is clearly Indian (there is no such dish in India, so actually an American dish with Indian influences).

PS: where could you possibly move that has no chinese restaurants? Just curious....

secret is RAMEN noodles!

those packs of brick noodles that cost 8p each. heat water, add noodles + flavour sache. meanwhile put some vegies under grill(onions, corn, bean sprouts, cabbage, chilli). after 2 minutes of boiling noodles drain then add grilled veggies. season with chilli sauce and soy sauce + lime. i add deep fried tofu for that takaway feel. yum
