TOFU STIR FRY
1 lb. tofu
2 tbsp. sherry
2 tbsp. soy sauce
1 tsp. grated ginger
1 clove garlic, minced
1/2 c. chopped onions
1/2 c. mixed vegetables
1/2 c. sliced mushrooms
1/2 c. red bell pepper, sliced
1/2 of one habenaro pepper
2 tbsp. olive oil
Noodles or rice
Rinse and drain tofu. Cut the tofu into 1-inch cubes. Make a marinade by mixing the sherry, soy sauce, and ginger together. Marinade the tofu for 30 minutes. Heat the wok, and add the oil. Add garlic,habenaro pepper and onion. Stir fry until the onion is limp. Add the carrots and stir fry for a minute or two. Add the rest of the vegetables and cook until the broccoli turns a bright green. Stir fry for another 3 minutes. Serve over noodles or rice.

Hot and Spicy Tofu
Servings: 4
Ingredients:
3 tablespoons peanut oil
1 pound firm tofu, cubed
1 red onion, sliced
1 red bell pepper, sliced
1 green chile pepper, chopped
3 cloves garlic, crushed
1/3 cup hot water
3 tablespoons white vinegar
3 tablespoons soy sauce
1 tablespoon brown sugar
1 teaspoon cornstarch
1 teaspoon crushed red pepper flakes
Directions:
1. Heat peanut oil in a wok or large frying pan over
medium-high heat.
Toss the tofu into the oil, and cook until browned
on all sides.
Once browned, toss in onion, bell pepper, chile pepper,
and garlic; cook until just tender, about 5 minutes.
2. In a small bowl, whisk together the hot water, vinegar,
soy sauce, brown sugar, cornstarch, and red pepper flakes.
Pour over tofu and vegetables, toss to coat,
and simmer 3 to 5 minutes, or until sauce
thickens slightly.
Tofu and Bell Peppers in Sweet & Sour Sauce
* 2 tablespoons low sodium soy or tamari sauce
* 2 teaspoons safflower oil
* 1 tablespoons arrowroot powder
* 1/2 cup rice vinegar
* 1/2 cup lemon juice
* 1 pound firm tofu
* 1/2 teaspoon grated gingerroot
* 1/3 cup honey
* 1/2 teaspoons salt (optional)
* 1/2 cup pienapple juice
* 1/4 teaspoon cayenne pepper (to taste)
* 1 cup thinly sliced red bell pepper
* 1/2 cup thinly sliced green bell pepper
* 1/3 cup thinly sliced yellow bell pepper
- In a wok over medium-high heat, saute bell peppers in the safflower oil until shiny (for about 5 minutes)
- In a large bowl combine arrowroot, vinegar, pineapple juice, lemon juice, honey, salt (if desired), and ginger. Pour over peppers and cook, stirring, until mixture thickness slightly
- Cut tofu into thin slices. Add to wok, cover, and steam 3 minutes. Add soy sauce and cayenne. Toss well and serve

Simple Curry Tofu
* 1 lb firm tofu
* ¼ Tbsp ground black pepper
* 1 cup chopped onion
* 2 Tbsp oil
* ¼ cup water
* 2 Tbsp tamari
* 4 Tbsp chunky peanut butter
* Tbsp Patak’s Curry Paste (mild or hot variety)
* 2 Tbsp honey
Garnish
thinly-sliced green onions
Pavel’s Russian Yogurt (plain)
Drain tofu and pat dry, cut into ½-inch cubes and sauté with onion in oil until lightly browned. In a bowl, whisk remaining ingredients and stir gently into tofu onion mixture until well-coated. Heat on low until bubbly. Serve on steamed potatoes, rice or cauliflower. Garnish with green onions and a spoonful of Pavel’s plain yogurt.
Spicy Tofu

Tofu Makhani
Preparation Time : 15 min.
Cooking Time : 25 min.
Serving : 4 People
Ingredients
1 8 oz pake of firm tofu
2 T.spoon fresh curd
3 big tomatoes
3 onion thinly sliced
1 T. Spoon Garam masala
2 T. Spoon crushed coriander & cumin Powder
1 1/2 T Spoon Red Chili powder
1/4 T Spoon Haldi Powder
1/4 cup fresh Cream
2 T Spoon Butter
4 T Spoon Ghee
Salt
(OR you can add masala as per your taste)
For Frying : Ghee
Fresh Thinly cut coriander leaves
Procedure :
Cut Tofu in finger length size and fry it in Ghee until it is little brown.
Spread curd on fry Tofu.
Put Tomatoes in warm water for 5 minutes & then cut it roughly.
Heat the pan and put Ghee in it. Put onions and saute till it become transparent.
Add Garam Masala, Coriander & Cumin Powder, Red Chili Powder, Haldi & Salt , Saute for one minute.
Add Tomatoes and saute for 5 minutes or until Ghee leaves the sides of pan.
Add one cup of water and cream. Leave it on slow fire for some time and then add butter .
Add Tofu in it and leave it for 2 minutes.
Remove from the fire and decorate with fresh coriander leaves
Tofu With Capsicum Veg
Ingredients
2 small or big 1 Capsicum
1 big Onion
Tofu (firm tofu) or cake tofu
1 tsp Vinegar (white)
1-2 tbsp Soya Sauce
Garlic paste
Ginger paste
Black Pepper powder
Method:
First cut the onion and capsicum in length wise.
Take oil in the pan, fry the onion and capsicum together till it turns little red in colour.
Add garlic and ginger paste, after 5 minutes add soya sauce, vinegar and black pepper powder.
At the end, add the tofu's pieces in the veg.
Note:
You can put the tofu's pieces in the soya sauce just for colouring. (3-4 )hours
Tofu-Rice
Ingredients
Hard Tofu 225 gms. small cubed,
Basmati Rice 1 cup (cooked earlier)
Onion medium 1 chopped small
Tomatoes medium 2 chopped small
Garam Masala 1 tea. spoon
Salt to taste
Garlic 3 podes crushed
Ginger 1 inch piece crushed
Green Chillies 1 crushed
Whole Cloves 4
Cinnamon Stick 1 inch
Black Pepper corn 5/6
Bay leaves 1/2
Cumin seeds tea spoon
Turmeric powder optional
Ghee/Butter 2 tbl. spoon
Method:
In frying pan heat ghee/butter. Add cloves, cinnamon, bay leaf, black pepper and cumin seeds until done i.e. do tadka.
Then add onion and saute until golden brown. Add tomatoes and saute until gee comes out. Add garam masala, garlic, ginger, chillies and bhunao for 2/3 minutes. Add tofu cubes and bhunao for 4/5 minutes, stir continuously. Add cooked rice and mix well.
Garnish with cilantro leaves.
Serve with Onion-Tomatoes Raita or plain Yogert.
Paalak-Tofu Curry
Ingredients
Spinach 1 lbs
Tofu 1 pocket
Onion 1 medium size
Tomato 1 medium size
Red Chilli powder to taste
Turmeric 1 pinch
Salt to taste
Cumin seeds 1 pinch
Garlic 2 flakes(optional)
Ginger 1 small piece (optional)
Oil 2 tbsp
Method:
Wash the Spinach thoroughly and add garlic and ginger then let it boil for 5-8 mts or until its soft.
Cool it and then grind to a fine paste alongwith the tomato.
Heat oil in a pan and add cumin seeds, when its done, quickly add lengthwise chopped onions , fry them until it turns golden brown.
Add little turmeric powder , chilli powder and salt and then add the spinach-tomato paste. add little water to give it a curry consistency. Let it cook for sometime.
cut Tofu into small square pieces and finally add to the above prepared curry. let it simmer for a while and enjoy the taste.....u can decorate it with coriander or mint leaves if u wish.....
Pasta with Tofu (Mexican Style)
Ingredients
Penne Pasta - 1 cup (serves 2)
Tofu - 1/2 packet
Chipotle pepper -1 (It is available in U. S grocery store in a small can).
Tomato Paste - 3 tbs
Garlic - 3 cloves.
Olive oil
Parmesan cheese & Parsley for garnishing.
Salt to taste.
Method:
Cook pasta as per the direction in the pack.
Finely mince the garlic.
Heat Olive oil in a kadai & add garlic to it. Now add the coarsely chopped chipotle pepper & Tomato paste. Add 1/2 cup water & Salt to the Pepper & Tomato paste. When it starts to boil add the Tofu which has been sliced into small cubes & cover them with a lid for a few minutes. Make sure that the liquid has not been evaporated.
Now add the cooked pasta to it. Sprinkle the parmesan cheese when Pasta is hot & garnish it with chopped Parsley. Pasta can be served with Sourdough bread & salad of your choice to make it a balanced diet.
Kadai Tofu
Ingredients
One Pack Extra Firm Tofu - cut into Julianne pieces or Long flat strips
2-3 Green, Yellow, Red Bell Peppers - cut into Julianne pieces or long flat strips.
1 red onions - cut into julianne pieces
1 inch ginger- chopped finely
2-3 green chills
1 -2 tbsp chat masala
1/4 -1/2 tbsp garam masala
Salt to taste
Method
Sprinkle the extra firm tofu with some chat masala and leave it to marinate for at least an hour.
Take oil on a flat pan and on slow flame stir fry the tofu on both sides till golden brown in color
Take oil in a separate pan and fry the onions, ginger and green chilles
Add the bell peppers and stir fry till they are crisp but not fully cooked
Add salt, garam masala and the tofu. Stir fry for a minute
Serve hot with bread, rotis or rice.
Stir-Fry Tofu
Ingredients
2 big cubes of firm tofu - cut in into small one inch cubes
1 1/2 tbsp. of corn flour mixed in 1/2 cup of water
3-4 green chillies - finely chopped
4 tbsp of dark soya sauce
2 inch ginger - finely chopped
3 cloves garlic - finely chopped
3 table spoon of Vegetable Oil/ Seasame oil
2 stalk of green onions - chopped
Salt to taste.
Method:
Drain the tofu from the package. Soak it into salted water for 2-3 hrs.
Heat oil in a non-stick pan/ wok. Add garlic and ginger and stir fry on high flame for 30 seconds.
Add green chillies and stir fry for another 10 sec. Reduce the flame.
Add the soya sauce and corn flour mix and stir continously. As the sauce starts to thicken add tofu. Boil it for 10 min on very slow flame.
Transfer tofu into a serving dish and sprinkle it with green onions.
Enjoy it with white steamed rice.
Tofu & Peas Curry
Ingredients
Ginger & Garlic paste - 1tbs
Onions -3
Tomatoes - 2
Tofu - 1 packet
Peas - 1 cup
Turmeric powder -1tsp
Chilly powder - 1tbs
Coriander powder - 1tbs
Cumin powder - 1tbs
Garam masala powder - 1tsp
Coriander leaves (chopped) for garnishing.
Oil for sauteing
Salt to taste.
Method:
Cut onions & tomatoes. Saute onions till they become transparent & grind them with tomatoes to a smooth paste form.
In a heavy bottomed kadai, saute peas with little oil till it gets a bright green colour & keep them seperate.
In the kadai, saute onion & tomato paste in oil till the paste gets a golden brown colour
Add the garlic & ginger paste to it &saute them till the smell of the onion comes out of it fully.
Now add Chilly powder,turmeric powder,coriander powder, garam masala powder & cumin powder &stir them for 5 minutes.
Add water to the mixture & let it to a boil. Once it has started to boil add peas, tofu & salt. Now the simmer the heat & let it to boil till the curry thickens.
Garnish them with chopped coriander leaves. Happy Cooking!
Alternatives:-
If you are using Panneer instead of Tofu, use fried lightly brown panner. The same dish can be made with Mushrooms too.

Ingredients

Method:
Drain off the water collected in the Tofu packet & show Tofu under running water for a second.
Slice the Tofu, Green pepper, Onion & tomato lengthwise.
Season the ingredients mentioned above in "for seasoning". When Mustard splutters add onion. Saute onion till it becomes slightly brown.
Then add tomato, green pepper, garam masala. Stir them for few seconds till you get the brown colour. Add Tofu & salt.Cook it with a half a cup of water & cover it with a lid till the water evaporates fully. Stir it for few seconds & remove it from the heat
