Beef Curry
1 T. oil
1 onion, finely chopped
1 - 2 cloves garlic, minced
1 T. lemon juice or vinegar
2 tsp curry powder (or to taste!)
1 lb beef, cut in 1-inch chunks
1/2 cup tomato juice or tomato sauce
1/2 tsp salt
1/2 - 1 cup broth or water
Directions:
Heat oil in heavy skillet or kettle.
Sauté onions and garlic.
In small bowl, blend lemon juice (or vinegar)
and curry powder.
Stir curry mixture into sautéed onions
and fry lightly 1-2 minutes.
Add beef and stir-fry briefly to coat meat with spices.
Add tomato juice (or sauce), salt and broth (or water).
Bring to a boil, reduce heat, cover and simmer about 2-3
hours. Add more liquid if needed.
Serve over hot rice.
Ginger Beef Curry (Slow Cooker Version)
To season this distinctive curry, pass up ready-made curry powder and mix your
own blend according to this recipe.
Servings: 10
Ingredients:
1/4 cup all-purpose flour
2 1/2 pounds lean boneless beef chuck, cut into 1/2 by 2 inch strips
2/3 cup water
1/3 cup tomato paste
2 large onions, finely chopped
3 tablespoons grated fresh ginger
6 cloves garlic, minced
1 (2 inch) piece cinnamon stick
1 teaspoon ground turmeric
1 teaspoon ground paprika
2 tablespoons ground cumin
1 tablespoon ground coriander
1 teaspoon ground cardamom
1/2 teaspoon ground cloves
1/2 teaspoon ground cayenne pepper
1/4 teaspoon ground nutmeg
salt to taste
1/3 cup chopped fresh cilantro
Directions:
1. Place beef and flour in a large, resealable plastic bag. Shake to coat beef
with flour. In a small bowl, mix tomato paste and water.
2. In a large slow cooker, combine onions, ginger, garlic, cinnamon stick,
turmeric, and paprika. Place beef on onions, and sprinkle with cumin, coriander,
cardamom, cloves, cayenne pepper, and nutmeg. Pour tomato paste mixture over
meat. Cover, and cook on LOW setting until beef is very tender, about 8 to 9
hours.
3. When ready to serve, season to taste with salt, and stir in cilantro.
Beef Curry
* 1 lb flank steak
* Marinade:
* 1 tablespoon low sodium soy sauce
* 1 tablespoon Chinese rice wine or dry sherry
* 1 teaspoon Asian sesame oil
* 1 1/2 teaspoons cornstarch
* Sauce:
* 1/2 cup low sodium chicken broth
* 1 tablespoon dark soy sauce
* 1 teaspoon salt substitute
* 1/2 teaspoon sugar substitute
* Other:
* 1/2 medium onion
* 3/4 cup snow pea pods
* 3 tablespoons curry powder
* 2 - 3 tablespoons water, as needed to make a paste
* 1 tablespoon canola oil
PREPARATION:
1. Cut the beef across the grain into thin strips approximately 1 1/2
inches long and 3/4 inch wide. Add the marinade ingredients, adding
the cornstarch last. Marinate the beef for 25 - 30 minutes.
2. While the beef is marinating, prepare the sauce and vegetables. In
a small bowl, combine the sauce ingredients and set aside. Chop the
onion. Blanch the snow pea pods in boiling water for 2 minutes. Rinse
in cold water and drain thoroughly.
3. Heat a non-stick skillet or wok over medium-high heat and add oil.
When the oil is hot, add the beef, laying it flat in the pan. Sear the
beef and then stir-fry briefly until it is cooked medium rare (pink
inside). Remove the beef from the pan. Reduce the heat to medium.
4. Add the onion. Stir briefly, then sprinkle the curry powder on top.
Add enough water to make a paste.
5. Add the snow peas and then the beef. Return the heat to
medium-high. Add the sauce and bring it to a boil. Cook for about
another 3 minutes. Taste and adjust the seasoning if desired. Serve
hot over rice.

Make this easy beef curry. Particularly is you are busy. Slice beef and place in marinade before you leave the house, it will be ready for cooking when you return home. If serving over rice, just add a salad. If serving beef in Pita bread*, chop a large tomato and use to top the beef.
Ingredients
1 lb. chuck steak, thinly sliced against grain
1 large onion, medium sliced
1 tblspn white vinegar
3 tblspn dark soy sauce
1 tblspn curry powder
1-1/2 tblspn fresh ginger, finely minced
4 or 5 garlic cloves, crushed
2 tblspn vegetable oil
Salt and pepper to taste
Directions
In small bowl make marinade of curry powder, vinegar, soy sauce, garlic and ginger; pour over sliced beef that has been place in a large pan or bowl. Marinate for at least 45 minutes to an hour.
Remove beef from marinade and place on paper towels to remove some of the liquid. Heat oil in skillet, then add onions and saute until they are transparent. Add beef to pan and cook until tender. Serve over rice or in Pita bread.
Makes 4 servings
Hint
Make your sandwich interesting, add a dollop of sour cream and finely sliced leeks to the topping mix.

there are many types of curry. this recipe i am giving u is an asian beef curry.
- Sliced the beef and boil them with sliced ginger to make it soft and easy to chew). Once boiled, take out the beef and keep the water aside.
- mashed 3 garlic and 1 onion
- curry leaves
- 3 tbsp of meat curry powder mix with half cup of water/coconut milk (to turn it into paste)
- 3 cups of coconut milk
- 1 x quartered potato (optional)
- 1 inch of cinnamon
- 1 star anise
- 1 cardammon
- salt
- 1 tsp or 1 cube of chicken stock (optional)
- 3 tbsp of cooking oil
1. Heat oil in pot, add the mashed garlic and onion til browned but not burnt. Basically once u smell the nice aroma, add in the star anise, cinnamon, and cardammon. Keep stirring and mixed well.
2. Add in the curry paste and keep stirring til it gets a bit dry and add curry leaves.
3. Add in the beef and a cup of beef broth (the water u boiled the beef with)
4. Add potato (optional)
5. Add chicken stock (optional)
6. Once beef or potato is cooked, add coconut milk and stir.
7. Salt to taste. Go easy on salt if u use chicken stock earlier.
8. The trick is to keep stirring once u added coconut milk, once u see it boiled, put out the fire and serve.
9. The curry gravy is entirely up to u. If u want it a bit dry or less gravy, put less coconut milk. If u like lots of gravy, by all means..
This curry can be eaten with rice or plain pancake.

If you like Thai food, simply put a can of coconut milk in a large pot, add some Thai curry paste, sautee the beef first and add it to the pot, then you can add sauteed onions and any other vegetables that interest you. After half an hour or so, add some Thai fish sauce (naam pla) and sugar. Let it sit for 5 to 10 minutes. Serve the dish with rice and add some basil (Thai preferably) to the curry right as it is served, and voila!

Beef & Potato Curry Recipe
Ingredients:
2 pounds boneless beef stew meat
3/4 teaspoon salt
1 teaspoon tumeric
1/2 cup veg oil
2 yellow onions,finely chopped
5 cloves garlic, minced
1 teaspoon minced fresh ginger
1/4 cup cumin
1 tablespoon coriander
1 tablespoon paprika
1 teaspoon cayenne
1 teaspoon cardamon
1 tablespoon chopped fresh cilantro
4 medium potatoes, peeled, quartered
5 cups water
Directions:
In a bowl, mix beef, salt and tumeric. Heat oil in a pot on medium. Add onion, garlic and ginger and saute 3 minutes. Add the beef mix and spices and saute 5 minutes. Add the water, cover and simmer til beef tender. Add potatoes and simmer another 20 minutes.
Curried Beef And Rice Recipe
Ingredients:
1 pound Sirloin steak; lean and boneless
1 tablespoon Curry powder
1/2 teaspoon Salt
1/8 teaspoon Ground red pepper
1 teaspoon Vegetable oil
1 cup Onion; coarsely chopped
2 cloves garlic; minced
1 cup Long-grain rice; uncooked
1 cup Beef broth; no-salt-added
1/2 cup Raisins
14 1/2 ounces Stewed red ripe tomatoes; no-salt-added - undrained
2 tablespoons Sliced almonds; toasted
Directions:
Trim fat from steak. Cut steak into 3/4 " cubes. Combine curry powder, salt and red pepper; stir well. Reserve 1 tsp. curry mixture; set aside. Sprinkle remaining curry mixture evenly over steak. Heat oil in a large nonstick skillet over Medium-High heat. Add steak; cook 4 minutes or until steak loses its pink color. Remove steak from skillet; set aside.
Add onion and garlic to skillet; cook 2 minutes. Add reserved teaspoon curry mixture, rice and next 3 ingredients; bring to a boil. Cover, reduce heat, and simmer 25 minutes or until liquid is absorbed. Return steak to skillet; stir well. Remove from heat; let stand, covered 5 minutes. Spoon onto individual serving plates; top with sliced almonds.
Per 1 cup steak mixture and 1 tsp. almonds: 309 calories, 6.1 gr. fat, 46 mg. cholesterol
