ICING FOR COOKIES:

3 c. sifted confectioner's sugar
1/4 c. soy milk
1 1/2 tsp. vanilla essence

Combine sugar, Soya milk, vanilla; mix well. Frost cookies.

For sugar cookies try mixing a little soft tofu, vanilla and powdered raw sugar (confectioners sugar is normally processed through burnt bones so isn't vegan). No real recipe here, just 'play' with the ingredients until you get the texture and taste *you* want. Keep in mind that it will firm up after the moisture from the vanilla and tofu evaporate.

Make your own powdered sugar by whirling some regular coarse grind turbinado or raw sugar (same stuff, just different names you might see on the bag/box) in a blender for a few minutes until it gets light and fluffy. Sift it to remove any remaining coarse sugar granules. You can, if you like, add a teaspoon of cornstarch to each cup of raw sugar you blenderize but it's not really needed when using soft tofu.

You can make a standard buttercream frosting using soy butter and soy milk instead of butter and milk. Soften 1 stick soy butter in microwave for about 30 seconds. Add 1 teaspoon vanilla, and 1 box confectioner's sugar. Using an electric mixer, beat while adding a few drops of soy milk at a time, until it's the consistency that you like. Even better, use 1 stick soy butter and an 8 ounce package of soy cream cheese, and proceed as above. It's like the cream cheese frosting that you use in carrot cake. I get all the soy products at either Safeway or Shoppers Food Warehouse. Enjoy!

Try this Royal Icing recipe:
1 cup raw cane sugar
1 and bit t cornstarch
Rice milk, lemon juice, or your choice of liquid

METHOD
Take about a cup of raw cane sugar and pop it into the blender with a little cornstarch (a little more than a teaspoon) to make it into powdered sugar -- blend until it's as fine as you want it -- then use a little rice milk or lemon juice (or whatever liquid you like) to make whatever consistancy you need.
Sometimes I add vanila or lemon zest or ginger or cardamom depending on what's getting iced.

actually most store bought frosting is vegan, pillsbury and duncan hines both have many flavors that are vegan. just read the label.
