Tofu is made by grinding up soy beans to extract the soluble protein. The resulting soya milk is curdled by various means to make curd or TOFU.

A block of soy bean curd.
It is bland in flavor, but it takes on the flavor of whatever sauce you cook it in. Extra firm style is great for Chinese dishes and stir-fry.

You can get silken tofu to make desserts like cheesecake and vegan forms of alfredo sauce etc.

A very versatile product. I love it. It's processed from soy beans and can be a meat substitute. It's good for women because it kind of replaces the female hormone lost at menopause. It's found dried or in the refrigerated case in soft or harder blocks and can be used in soups or toss fried dishes or as a main course. You find it in vegetarian food products such as fake meat or veggie burgers.
