I am working in a science project. I am comparing cow, goat, soy and rice milk. I need to find what milk last longer out of the fridge and why.

Since you are working on a science project why don't you try the experiment! Just put equal amount of each in open bowls and wait a few days. You did get the order right though.

Micro-organisms such as bacteria, yeasts and molds cause milk to spoil. These organisms grow faster at room temperature so that's why we put milk in the refrigerator to preserve it. How long milk will last when taken out of the frig depends on how old it is and how high the bacteria count is when taken out. Nowadays a lot of fresh milk is ultra pasteurized at nearly 180F; much higher than the minimum (~160F for 15 secs) required to simply "pasteurize" it. Consequently the number of micro-organisms in fresh milk is lower than in the past so it lasts longer.

Bacteria, moulds, enzymes. most milk is pasteurised but that only kills the majority of pathenogenic bacteria there are plenty of other bacteria that survive the process the biggest group are probably spore forming bacteria. there is plenty of info on this stuff on the web if you live near a college that has a microbiology or food microbiology/safety courses they should contain plenty of books for research.

topics I would suggest are dairy science, food microbiology, food safety there are others but you need to do a small bit of research.
