here is one my friends keep asking me to bring to parties.
In a food processor or blender mix,
2 cups of Black beans
4 tsp tomato paste
3 Tbls water
2 clove garlic
2 tsp lime juice
1/2 tsp cumin
1/2 tsp salt
1/4 tsp cayenne
blend until consistency of hummus
remove from container into a bowl and stir in 2 chooped green onions and two chopped jalepeno peppers. Serve with tortilla chips.

Here's my recipe for black bean salad. Just skip the tomatoes.
BLACK BEAN SALAD
Two 15.5 oz cans of black beans
Four plum tomatoes, chopped
One small onion, chopped
Three jalapenos, (for hot) or one poblano or bell pepper (for mild), chopped
One small can (about 8 oz.) corn
Three tablespoons olive oil
One tablespoon of either red vinegar or lime juice
Chopped cilantro leaves and stems to taste
Two teaspoons chile powder
Two teaspoons cumin
Salt to taste
Drain and rinse the beans. Chop the tomatoes, onions, pepper, and cilantro, and then simply combine all the ingredients.

I love making black bean soft tacos or burritos. I cook the black beans with chopped onions and jalapenos (sometimes green peppers too!). I put them in a soft wheat tortilla and top w/ cheese and taco sauce. It's quick and VERY tasty! You can have a side of sour cream and guacamole if you'd like.

Black beans are my fav! And so is Mexican food!
I use mashed black beans instead refried beans for dips, tacos, Mexican pizzas, quesadillas and burritos. Black beans and rice is really good too. Cook the beans with peppers and onions. Black bean chipotle chili is awesome if you like hot stuff (if you don't, leave out the chipotle).

I know it's way too basic, but it needs to be said.
Black beans over white rice is one of the greatest meals on Earth. Way too simple, way too tasty.
It's a must when I visit any Hispanic restaurant and I consistently make it at home.
