I know that I will be either putting out sandwich meat or making footlong subs myself. (I can not buy subs anyplace- we are military and live oversea). I thought I'd make potato salad, macaroni salad, fruit tray, veggie tray, and a cheese and crackers tray. Any other ideas?

There's going to be about 50 people or so.

how about a crockpot full of soup? it is something you can throw together in the morning and leave it on low til you return and then it will be hot for your guests when they arrive. or chili but do you really want 50 or so people stinking up your house?

4:00pm is very close to dinner time and by the time all your guests arrive it will be. You may want to offer something more substantial for dinner. You may want to start out with veggie trays, cheese & crackers when your guests first arrive while you get dinner ready. You can buy some frozen lasagna and set your oven timer to cook while you're away. You can always precook the lasagnas before the baptism and heat them up as soon as you get home. You can have a green salad prepared to serve with some bread for dinner.

Don't forget the drinks! How about a lovely punch? Everyone loves that. My favorite is using a bottle of red grape juice and a bottle of white grape juice with a bottle of limon-lime soda. It turns such a pretty pinkish color and is tasty. I used the recipe for my wedding. =)

As far as a dessert goes...making something for 50 people will seem daunting. How about a cake or two and then make some cupcakes. Kids love cupcakes. You can make the dessert thing rather simple by making them the day before and frosting them in the morning of your party. And, cake mixes make A LOT of cupcakes! So you should be good to go. Have a great party!

Take puff pastry, goats cheese, tomato, basil, onion.
Roll out the pastry and cut into rounds.
Cut the cheese and tomatoes and onion into rings.
Put onion on pastry, then cheese, then tomatoes, a bit of s and p
(this can all be prepared in advance and then bunged in an oven for 10 minutes just before guests arrive.)

Place basil leaves on top for taste and decoration. Alternatively, you could put a slice of olive on top.

It is a pity you do not say when this party is, otherwise I could have given you other recipes.

Hey, don't forget the chips and dip.You have a good menu already.Then just put out some cookies for the kids and cake if you think you'll need one....

why dont you get a pool and a band and a spread buffet and some limos and invite people from both coasts and call the press?

i tell you, the kid ain't gonna care. but you can make this a blowout.
