cheese enchiladas, rice, and beans, are they put in a microwave before they are brought out to you at the table? or in a small conventional oven?

At the place where we go, they use plates that they can put in the oven so, when they bake cheese over burritos and whatnot, they just stick the entire plate in the oven. Otherwise, they could have heat lamps in the window to keep food warm until the food gets delivered to your table. I don't think they would use a microwave, though I suppose it is possible.

Plates in a restaurant, any restaurant, are usually placed under a heat lamp or in the oven. These are the two places used.

No... it's not a microwave. After they plate the food, to melt the cheese which is usually put on top, it's put under something called a salamander broiler. This quickly melts the cheese. It's then taken out and any cold salads are added to the plate. I believe they put the plate in the oven so all the cheese gets to melt, and that is why the plate is hot when they bring it out to you.

A lot of restaurants have plates in a warmer so that they are served warm. You might ask at the restaurant in question why the plates are warm. Also ask them if they microwave your food.

They have a plate warmer that is plugged in holds about 50+ plates(various sizes) stacked in them and they are heated by steam. You'll see them at buffet places, banquets, chinese buffet etc. Some may even use the steam table where prepped food is kept
