Do not add sugar to your spagehetti sauce thats one of the evil sins of cooking. Make sure all the seeds are out of the tomatoes because the seeds can become bitter when cooked. Do not add any sugar to your sauce if you do, a ghost of a Italian Grandma is going to come and haunt you

Add a little sugar. If you don't wanna use sugar, then add some finely chopped or grated carrot, or even finely chopped or grated pepper, but only red or yellow or orange, not green. If you don't want the veggie bits & pieces, then juice them first.
You might wanna tone down the spice, too.

dont put sugar in it. it is unhealthy. instead take about 1 to 2 cups of baby carrots and put it in the chopper. the natural sugars in the carrots will sweeten your sauce. this is a healthier solution to plain refined sugar. i usually chop a cup of onion too to make the sauce thicker and give it a body and richness. so 1-2 cups of chopped baby carrots and 1 cup of chopped onion.

I don't know if you're adding any herbs but if you add too many Bay leaves it will be bitter- could try to cut down on the bay leaves.

Use good quality tomatoes, take out ALL seeds you can also add a little finely diced carrots during the saute process , you can add a little sugar if you want but don't overdo it.....
