4. recipe was not refrigerated after cooking or
5. moldy ingredients (esp. cheese) or

7. cat and dog started eating it while no one's watching or
8.someone was getting drunk in the house and threw some raw bacon in the recipe or
9. a potted plant fell in it and dirt got in there....

All organic (once living) matter breaks down over time. Once the animal or vegetable is no longer living, a series of complicated biological reactions which release chemicals and organisms within the matter will begin. Heat, light and moisture hasten this decomposition. Refrigeration can slow the process, but does not stop it entirely. Freezing is best option to perserve food over a longer time.

oxygen, and sunlight both destroy sugars and proteins. Water (in the form of humidity) binds with other ingredients to change them chemically. That's the same reason that pharmaceuticals go bad. And of course the big reason is Microbes...or single-celled animals and plants that are constatly in the air and digest (dissolve) anything edible.
Humans need some of these very same bacteria to digest food or us in our intestines.
