In the movie VEER-ZARA when Rani Mukherjee goes to visit Veer in the prison she takes him food called "ladoos" can anyone tell me how to make these?? anyone have the precipe they would like to share?? It would be a great help! thanks!!

"Bind into ladoos" thanks but.... how do I do that?? I don't know how to make them.... do I tie string around them or what? I really have no idea... thanks!!

I think she takes him Bhoondi Laddus. Here is the recipe:

You can buy them ready made at Indian stores also.

Bhoondhi Ladoos

Ingredients:

* 1 cup Channa Besan (make sure it should not have clumps.)
* 1 Tsp Rice Flour
* Salt 1 pinch
* 8-10 Cashews
* 8-10 Rasins
* 4-5 Cloves
* Orange colour
* 4 tbsp Ghee.
* 8-10 Elaichi (powdered)
* Oil for frying

For making sugar syrup:

* Sugar - 1 3/4 cup
* Water - 3/4 cup


Method:

1. Mix channa besan, rice flour, pinch of orange colour and salt with water. (the consistency should be like dosa mix so that it should be easy to make bhoondhi)
2. Heat oil in a frying pan.
3. In the mean time in a pan heat 3/4 cup of water. Bring it to boil. Then add 1 3/4 of sugar. Put it in medium heat to make the sugar syrup. (care should be taken that the sugar syrup is not over done. Using a spoon take few drops of sugar syrup, when you pour it from the spoon the last drop of the syrup should form a thin continuous line. If it doesn't keep it for boiling for another 2 minutes.)
4. When the oil is heated up, using a cup pour the mix little by little on a perforated spoon to make bhoondhi. Fry it for 3 minutes. Continue with the remaining mix.
5. In a heated pan add 1 tbsp of ghee and fry cloves and cashews. Keep it aside.
6. Once the bhoondhies are done put it in a vessel and smash 1/4 of bhoondhi with a spoon then add the sugar syrup, rasins, fried cashews , cloves, powdered elaichi and the remaining ghee. Make it into a ball (even when it is hot.)

Ladoo would literally mean a Sweet Ball (about the size of a golf ball). It is made out of many things. Like semolina, Wheat, lentil four, edible gum etc.
It is a sweet with lots of caloies and fat. Many people add cashews, raisins, almonds and pistachos in ladoos.
The way they make and ingredients used is varied from region to region.
Once you have the recipe, and they say make into ladoos, it means bind the mixture into Balls. It can be a big size ball like golf ball or small like tennis balls.
The best time to shape the ladoos is when the mixture is hot. Else the mixture will not bind together.
This is the hardest part as you may burn your hands if not cautious.

Rava Ladoos

Simply yummy!!!


2 1/2 cups semolina
1 cup grated desiccated coconut
2 1/2 cups powdered sugar
3-5 tablespoons ghee
1/2 teaspoon cardamom powder


Roast the rava (semolina) till pinkish brown in colour.
Add coconut, powdered sugar and ghee.
Roast a little more.
Quickly remove from fire.
Add cardamom powder.
Bind into ladoos while still warm.
Decorate with cashews/almonds and raisins.
If you wish to make it look really attractive, you can decorate it with silver warakh (edible silver foil).

ladus are a work of skill, how ever I would give you a simple besan laddoo receipe, since you are a beginner.
half k.g. gram flour, should be fresh, and not lying for many days, quarter k.g. pure ghee, pithi sakhar, that is powder sugar, you can make it at home also, in a mixer, some raisins, cardamom powder, coarsely ground, about 1 tea spoon, a little warm milk, about half a cup.
in a deep pan, melt ghee, and add besan, keep stirring on medium fire, don't allow to burn. fry till change of colour and roasted aroma.
pour carefully in a large plate, and add powdered sugar, mix well with a spoon.
the sugar will help bind the ladoos, wait till you can touch it with bare hands.
sprinkle some warm milk on the mixture as required, but not too much.
add raisins, cardamom powder, soak raisins before that, drain, and you may also fry them with besan, towards the end.
take the mixture in your palms, press it in a round form, make them in the size of about big pedas, not too big, and leave them to cool.
when done, store in a air tight container.
these are besan laddoos for you to enjoy !

Bhoondi Ladoo

Ingredients

For Bhoondi
1 cup Besan
1 cup and till over Water
1 pinch baking soda(soda bicarbonate)
Oil for frying

For Syrup
1 cup Sugar
1 cup Water

4-6 Velchi(cardamoms)powdered
2-3 Lavang crushed
Kaju,Bedane(raisans)
Little Toop(Ghee) for frying dry fruit

Method

For Syrup

Put Sugar and water into a heavy bottom pan.
Boil it till one thread consistency.
Turn off the heat add Velchi and Kesar.

For Bhoondi

Sift besan,baking soda.
Add water to besan without forming lumps.
Rest the batter for 15 mins.
Heat oil in kadhai for frying bhoondi.
Take jhara or ladle (spoon used for frying)and put it over oil,then
pour a spooful of besan batter on it.
Tap the Jhara so that the batter falls in small drops (bhoondi)into hot
oil.
Fry till bhoondi is golden colour.
Drain on paper towel.
Continue frying for remain batter.
Fry dry fruits in little toop till dry fruits are light golden.
Add fried dry fruits (Kaju and Raisans) to the bhoondi.
Add sugar syrup to bhoondi and mix it well.
Allow it to cool a bit (15 mins) and then make ladoos.
Let ladoos dry for an hour for better taste.



Kurmura Ladoo
Ingredients:
1/2 lb Puffed rice (murmura, churmura)
1/2 lb Jaggery
1/2 cup Roasted peanuts
1/2 cup Dry coconut flakes
a few Cardamoms

Method:
Take a large cooking pan add jaggery and enough water till it gets immersed and boil till it forms to thick consistency.
To ensure that this syrup had reached the correct consistency, add a few drops into a bowl containing water and it shall solidify immediately.
Add puffed rice, roasted peanuts, dry coconut flakes and cardamom powder and stir in all the ingredients. Let it cool for a couple of minutes.
Grease your palm with oil or ghee and roll into balls.

Atta Ladoo
Ingredients:
250 gms atta (flour)
200 gms. Jaggery
30 gms vanaspati or ghee.

Method:
Roast atta on a tava.
Add grated jaggery.
Mix in fat.
Form into lime-sized balls

BESAN KE LADOO






Ingredients

4 cups Gram Flour
1 cup Pure Ghee
2 cups sugar
1 tsp Powdered Cardamom
1/2 cup chopped Almonds and Raisins

Method

Heat the ghee in a pan.
Add the gram flour and fry it on a low flame stirring continuously till brown.
Once it is browned, let it cool.
Add powdered cardamom and sugar. Mix well.
Add chopped almonds and raisins.
Shape into ladoos and serve.
