Bake a ham, slice, and serve at room temperature. You should also have rolls and cheese in case people want to make sandwiches. I also really like sliced roast beef in gravy for a buffest because you can serve it in a crockpot and keep it warm. This also works for chicken in gravy. Meatballs in a crockpot with either red sauce or brown gravy works really well, again in a crockpot. Sausage and peppers keeps nicely in a crockpot. I'm a big fan of a tossed salad with the dressings on the side. Buttered and parsleyed potatoes can be kept warm in an electric roasting pan. Most vegetables can be kept in crockpots or electric roasting pans.

Baked ziti with meatballs; chicken wings or tenders; rice balls; potato croquettes; chicken parmigiana or francese; tea sandwiches; rolled up coldcuts with baked rolls for self-serve sandwiches; two kinds of salad with dressings on the side.
