Ingredients:

Brown sugar for a syrup
Instructions:
Mix eggs and milks together, make a syurp of the sugar and hot water in a flan pan add egg mixture and steam in wok for 30-40 min.

Leche Flan
6 eggs
1 can condensed milk
1 c regular milk
1 T vanilla
1 T lemon juice
1/2 c regular sugar
1 c cherimoya, peeled, seeded, and chunked or your
favorite fruit garnish
PREPARATION METHOD
Mix all the ingredients (except the sugar) using a
mixer.
In a small pan (at medium heat) melt sugar until it turns
caramel-brown.
Separately, cover the bottom and sides of a pie dish with
the caramel-brown sugar, before it cools off, add the
mixture you prepared with all the ingredietns and
cover the dish with aluminum foil.
Place the pie dish with the mixture and the caramel
in a double boil pot.
Put the double boil pot in the oven at 400 degrees F and
cook it until your inserted knife (test) in the middle
of the mixture comes out clean.
It might take an hour of cooking time.
Let it cool for a few minutes and turn it over in
a flat dish or tray.

Ingredients:
1 can condensed milk
1 can evaporated milk
12 egg yolks
1-1/2 cups sugar
1 tablespoon vanilla or lemon extract or any fruit flavor of your choice
Cooking Method:
Caramelize the sugar. Pour caramelized sugar in a molder. Beat condensed milk, evaporated milk, and egg yolks. Pour mixture in the molder and steam in a double boiler for twenty-minutes or you can bake it in a pan with water about half as high as the molder for about forty-five minutes until it's soft and settled. Can be served with ice cream or halo-halo.

PHILIPPINE'S LECHE FLAN
Caramel:
1 cup sugar
3/4 cup water
Custard:
12 egg yolks
2 cans (13 oz.) evaporated and condensed sweetened milk
1 tbsp. vanilla
In a large bowl, combine all custard ingredients. Stir lightly when mixing to prevent bubbles or foam from forming. Strain slowly while pouring caramel lined flan mold.
Preheat oven to 325 degrees.
Cover mold with tin foil. Put molds into a bigger tray filled with water.
Bake in oven for one hour or until mixture is firm. cool before unmolding on a platter.
Put sugar and water in a saucepan. Caramelize in medium heat until sugar is dissolved. Pour into flan molds or custard cups, tilting the mold to make sure the whole surface (about less than 1 cm) is covered. The more caramel you pour into the molds the sweeter the leche flan.
Put molds in a bigger tray/ baking pan filled with water.
Bake in oven for one hour or until mixture is firm. Cool before unmolding on a platter.

Almond Leche Flan
Ingredients
1 cup white sugar
1/4 cup water
1 (12 fluid ounce) can evaporated milk
1 (5 ounce) can sweetened condensed milk
6 egg yolks
1 tablespoon almond extract
Preparation
Preheat oven to 350 degrees F (175 degrees C).
In a heavy saucepan over medium heat, cook sugar with water, stirring, until melted and light brown. Pour into a flan pan or cake mold, tilting to coat the bottom of the pan. Set aside.
In a bowl, gently whisk together evaporated milk, condensed milk, egg yolks and almond extract, being careful not to incorporate any air into the mixture. Pour into prepared pan, and tap on the counter to remove any bubbles.
Line a roasting pan with a damp kitchen towel. Place baking dish on towel, inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with water to reach halfway up the sides of the baking dish.
Bake in preheated oven 45 to 50 minutes, until set. Let cool completely.
To unmold, run a knife around the edges of the pan and invert the flan onto a rimmed serving platter. Refrigerate 8 hours or overnight before serving.
Coconut Leche Flan
150g brown sugar
60ml water
500ml thick santan
6 egg yolks
4 egg whites, lightly beaten
60g sugar
pinch salt
1 tsp grated lemon rind
1. Make caramel with brown sugar and water. Coat dish with 3/4 of caramel.
2. Stir santan into remaining caramel and cook over low heat for 1 minute.
3. Mix yolks and whites, stir in rest of ingredients including the santan-caramel mixture. Mix and strain into dish.
4. Bake in a water bath at 150 C for 90 minutes. Then put under grill at 220 C until the surface browns and sizzle.
I ate my flan with the remaining few drops of iichiko yuzu liquer. This is a really delicious citrus liquer that was available at Isetan supermarket but I discovered it really late and only managed to buy the last bottle. There would be more stocks arriving soon I hope, but in the meantime, Isetan also carries ume liquer from the same brand that is very lovely to drink- I find the plum within more tasty (no bitter aftertaste) than the Choya version and what's more it is also considerably cheaper
