Raid your local Deli or Supermarket deli and get lots of antipasto type item..nice prosciutto, some cheese, sun dried tomatoes, artichoke hearts in oil, olives, great crusty bread and a bottle of your favourite wine. Easy to prepare- can look stunning and the casual-ness is just right for a Saturday evening! For dessert get some in season fruit and a large bar of your favourite chocolate!

Easy but looks good is pasta Carbonara.
For 2:
3 egg yolks (better if you separate them but if you don't know how you can use whole eggs but then use small ones)
3 or so spoons of cream (you can use creme fraiche if you want)
Grated cheese (you are supposed to use parmesan but cheddar is fine)
Mix it all together and that's your sauce
Also cut up 3 or 4 rashers of bacon
Cook the pasta
drain it and keep it to one side covered
Now fry up the bacon - quick as you can
Throw in the pasta AND TURN OFF THE HEAT
Now mix the sauce in and really coat the pasta (it will thicken up and cook in the residual heat)
Dish up on warm plates and top with a bit more cheese.
TAKES ALL OF 15 MINUTES AND APART FROM THE LAST MINUTE PANIC IS DEAD EASY...

Chicken breasts in a caper cream sauce. Really easy and makes it look like you are soooo elegant!
Serve with a veggie and a starch. My suggestion - either a salad and rice or potatos of some kind, or steamed veggies and rice pilaf. The recipe below serves four people.
INGREDIENTS
4 boneless, skinless chicken breast halves
1 teaspoon lemon pepper
1 teaspoon salt
1 teaspoon dried dill weed
1 teaspoon garlic powder
3 tablespoons butter
1/2 cup whipping cream
2 tablespoons capers, drained and rinsed
DIRECTIONS
Season chicken breasts with lemon pepper, salt, dill weed, and garlic powder.
Melt butter in a large skillet over medium heat. Place breasts in skillet, and increase heat to medium-high. Turn chicken frequently, until brown, about 5 minutes. Reduce heat to medium, and cook 5 to 7 minutes, until breasts are cooked through. Remove chicken to a warm serving platter, and cover with foil.
Return skillet to stove, and increase heat to high. Whisk in whipping cream, whisking continuously until reduced to sauce consistency, about 3 minutes. Remove from heat. Stir in capers. Pour sauce over chicken, and serve.

Medium cooked, (little pink is good) porter house steak and mashed taters. Homemade gravy is the best whether you use chicken or meat. Then cooked carrots on the side.
