EASY VEGETARIAN CHILI
Ingredients:
2 cans (15 or 16 oz. each) kidney beans
1 can (1 lb., 12 oz.) Italian plum tomatoes
1 cup chopped onion
1 cup green bell pepper, cut into 1/2 inch squares
1 clove garlic, crushed
1 1/2 tablespoons chili powder
1 cup bulgur wheat (or substitute raw brown rice)
1 1/2 cups water
Put beans, tomatoes, onion, green pepper, garlic and chili powder into a large pot. Bring to a boil; lower heat, cover and simmer 30 minutes. Stir occasionally. Add bulgur. (or rice) and water. Cover and simmer 30 additional minutes (40 for brown rice). Makes 10 servings It's low cal too! Enjoy.

Vegetable Platter
2 C. cauliflower buds
2 large carrots, cubed
½ lb. (225 g) green beans, cut
1 lb. green peas, shelled, or 1 10
oz. (280 g) package frozen peas.
1/4 lb. (113 g) button mushrooms
4 Tbls. (½ stick) real butter
Minced parsley
METHOD:
Cook
cauliflower, carrots, beans and peas in separate saucepans,
taking care not to overcook them. Drain well, saving ½
cup of liquid vegetables were cooked in. Arrange on a
platter. Take care to make it look attractive. Sauté the
mushrooms in butter until lightly browned. Add these to the
platter. Dribble butter over the vegetables. Pour the
reserved vegetable liquid over the vegetables. Sprinkle
minced parsley over top. Makes 6 to 8
servings.
Hot and Spicy Tofu
Servings: 4
Ingredients:
3 tablespoons peanut oil
1 pound firm tofu, cubed
1 red onion, sliced
1 red bell pepper, sliced
1 green chile pepper, chopped
3 cloves garlic, crushed
1/3 cup hot water
3 tablespoons white vinegar
3 tablespoons soy sauce
1 tablespoon brown sugar
1 teaspoon cornstarch
1 teaspoon crushed red pepper flakes
Directions:
1. Heat peanut oil in a wok or large frying pan over
medium-high heat.
Toss the tofu into the oil, and cook until browned
on all sides.
Once browned, toss in onion, bell pepper, chile pepper,
and garlic; cook until just tender, about 5 minutes.
2. In a small bowl, whisk together the hot water, vinegar,
soy sauce, brown sugar, cornstarch, and red pepper flakes.
Pour over tofu and vegetables, toss to coat,
and simmer 3 to 5 minutes, or until sauce
thickens slightly.
