Well, you could always go vegan and not use any cheese...

My own personal veggie sandwich recipe that I made:

2 slices of bread (whole grain, duh)
Some hummus
Half an avocado
Sprouts
A slice of onion
Thyme

You spread hummus liberally on one side, mash up the half-avocado and spread it on the other, spread the onion slice around the middle, put the sprouts in there somewhere, and add thyme to taste.

There's like a million cheese out there to choose from and a zillion ways to put together a sandwich! I recommend that you buy different kinds of cheese to experiment with. Maybe even ask for samples at the deli counter. I like a lot fo strong cheeses like feta, gouda and sharp cheddar.
But here's my favorite cheese sandwich:

2 slices french or some other crusty bread
sliced mozzarella
sliced tomato
fresh basil
mayonnaise or olive oil to taste
salt and pepper to taste

YUM!

1 medium Apple -- finely chopped
¾ cup Salad dressing -- or
Mayonnaise
½ cup Walnuts -- finely chopped
12 slice Bread -- toasted & buttered
12 each Bacon strips -- cooked
6 each Hard-cooked eggs -- sliced
6 each Tomato slices -- optional

In a bowl. combine cheese. apple. salad dressins and walnuts Spread on 6 slices of bread: place 2 slices of bacon on each. Cover with egg slices. Top with tomatoes if desired and remaining slices of bread. Yield: 6 servings Recipe By : Taste of Home
2":A good hot sandwich
Categories: Sandwiches
Yield: 1 Servings
1 cup Cubed American cheese
3 Hard-cooked eggs; chopped
1 can Spam; cubed
2 tablespoon Chopped green bell pepper
2 tablespoon Chopped onion
2 tablespoon Chopped green olives
2 tablespoon Chopped sweet pickle
½ cup Mayonnaise
