The expiration date on the Tofu says Jan 28. I have kept it refrigerated and I was going to cook it today and saw the date. Do you think it will still be ok?

It will be fine, i have eaten it about 2 weeks after before. So long as you cook it well :D I'm alive.

If that's purely been 2 or 3 days, throw out the dry area off and fry the heck out of something else of it. Like others have reported, it may of lasted a week after being opened in case you took care of it. next time you've some left over in basic terms decrease it into cubes and freeze it in a zipper lock freezer bag. Edit: After 2 a million/2 - 3 weeks the stuff is undesirable, tosss it out.

The one I buy says use within 3 days of opening. But if it's vacuumed sealed and unopened it might be alright?

it will be just fine but cook it and add some sause. Yuuuuummmmmm! i've tried it lots of times before.

It should still be okay, it hasn't passed the expiry date too much.
However, if you end up with food-poisoning it wasn't my advice, it was someone else's, remember that!
