The veggie pattie that a few Subway stores use is made for them by Morningstar Farms and there are two different versions available to the Subway stores (just to really make things complicated). One version is almost identical to the Morningstar Farms Garden Veggie Burgers with the only change being the size of the pattie, the other one is the standard Breakfast Sausage Pattie! If your Subway pattie has bits of veggies it's the first, no veggie bits it's the second. Then just hit your regular grocers freezer section to buy the one your restaurant uses.

If you don't mind would you do an edit to tell us where the franchise is that actually carries the 'off the menu' veggie pattie as those franchises that do this are *very* rare.

I was just commenting for Greenghost(?) that a couple of the Subway stores in Baton Rouge, LA still have the veggie patties. They are the ones with veggies in them, like the morningstar ones.
Interesting...

I would grate one onion and two large carrots into a bowl. I would then add 1 500 ml can. refried beans, oats or cooked rice, up to one cup, egg and seasoning, maybe a little olive oil and chopped cilantro or jalapeno. Then I would dip them in flour. Leave them in the refrigerator for an hour to 'firm up'. Then heat up a large, deep saucepan with 1" oil, preferably corn or mazola. Fry on both sides.

It can be served with salsa, cheese, lettuce, tomatoes, cucumbers and mayonnaise on kaiser buns. You can wrap a pita around them after slicing them and serve them with tzaziki, feta cheese and bean sprouts. Even by themselves topped with salsa and cheese slices. Should make about 6 medium patties.
