Hi, I'm Welsh but live in Tunisia with a Filipino housekeeper. We have pancakes, fruit salad or porridge for breakfast. Salad with fish or meat for lunch and something with rice and salad for dinner.
Before we had the housekeeper we would eat fresh bread and croissants for breakfast. Soup or sandwiches for lunch and cous-cous or pasta for dinner.
Needless to say we are healthier on the Filipino diet and have lost a lot of weight!! XX

Foreign to whom? For all I know, your would be a foreign mum to me.
And whether you see it that way or not, whatever you generally cook for your family is "ethnic food" to most of the world.
If you're truly interested in what other mothers cook for their families every day, then ask that question, and drop the ethnocentric act. It's an ugly concept.

im a chinese live in indonesia.
my family mostly cook indonesian or chinese food.
sometimes we have one dish menu, like:
soto ( local one dish meal soup consist of broth, shredded chicken, rice noodle, boiled veggies, chopped coriander, fried onion)
porridge ( with shredder chicken, fried soy bean, fried spanish onion, etc)
ok so indonesian food are all about texture thts why they have lots of little thing around to add to the dish, like chopped coriander, fried spanish onion, boiled veggies, crackers, etc so everyone can add anything they want in any amount to suit their own taste.
aside from the one dish meal ( not really one dish but relly have to work with those lots of side condiment)
our family cook some normal dishes like protein, carbohydrate etc.
we always have: rice
and side dishes: sauteed veggies or soup
with vegetable or/and animal protein: fried tempeh/beancurd, stewed/fried/ steamed chicken /pork/fish ( dont really eat much beef)
other family would also cook sauteed some veggies/protein mixed with rice noodle, sauteed potato as side dishes to eat with rice.
but we rarely eat meat now except fish.
my family is crazy about fried tempeh, id ont really eat meat so when everything doesnt suit me i'll have rice and friedtempeh only. very tasty:D
by the way only best tempeh quality will give u the best taste becoz fried tempeh has very little spice so the tempeh quality itslef will decide the overall taste.
oh yum!

Asia: Morning, noon and night: rice is the staple.
For breakfast: an egg or oatmeal and fresh fruits and almonds.
Lunch: clear broth with chicken and vegetables, fresh fruits for dessert.
Supper: steamed fish, vegetables and soup with fresh fruits.
It could be cultural, but with the busy lifestyle nowadays, it may not always be so.
