Scandinavia - three different countries: Sweden, Norway and Denmark.
A typical breakfast in Denmark, similar to Germany´s, consists of bread rolls or toast with butter and Danish skæreost (slicing cheese), a buttery creamy white cheese, fruit jam, and a lot of coffee. A bigger and fancier spread might also include cold cuts (cold, thin-sliced ham, rullepølse, salami), soft-boiled eggs, muesli and sweet rolls of all types. Special occasions are often celebrated with a shot of GammelDansk in Denmark.
Breakfasts in other parts of Scandinavia may be quite ample. Fish, cheese, eggs, bacon, hot and cold cereals, breads and fruits are all eaten in various combinations, along with juices, coffee and tea. Filmjölk (Sweden) or kulturmelk (Norway), a soured milk similar to buttermilk or yogurt is often used on cereals.
Serve cold cuts (luncheon meats), cheese, yogurt, cereals, muesli, juice, butter, croissants, crisp breads, rolls, coffee or tea and you have a rather typical Scandinavian breakfast..
(Whole-grain porridges are popular in Finland).

Swedish Pancakes
INGREDIENTS
4 extra large eggs, separated
1 cup all-purpose flour
1/2 teaspoon salt
2 tablespoons white sugar
1 cup milk
3 tablespoons sour cream
4 egg whites
3 tablespoons vegetable oil
DIRECTIONS
1) In a medium-size mixing bowl, beat yolks until thick. In a separate bowl, sift together flour, salt and sugar. Add the sugar mixture and milk into the egg yolks incrementally. Stir in the sour cream,
2) In a medium-size mixing bowl, beat egg whites until stiff but not dry. Fold the egg whiles into the batter.
3) Heat skillet or griddle to a high temperature. Place a small amount of oil on the skillet and pour about 1 tablespoon of batter onto the skillet, and spread the batter out evenly. Brown the pancake on one side. Flip pancake over when bubbles appear on surface. Brown on the other side. Repeat process with remaining batter.
