hmm. i usually take leftovers personally.
but if that's not an option, you can get a bunch of different sizes of tupperware that will stack in one of those insulated bags.
suggestions:
cut up fruit
veggie sticks with hummus
tortilla/pita sandwiches (peanut butter/banana, cream cheese and salsa, veggie spread and veggies, etc)
get a thermos and pack a hearty soup or stew

Carry out Carrot Salad
Very portable.

4 carrots, shredded WITH the tops (VERY IMPORTANT)
1 T. chopped fresh parsley
1 T. snipped chives or chopped green scallions
3 T. unpasteurized apple cider vinegar or lemon juice
4 T. unrefined vegetable oil (flax, olive, hemp, primrose, borage)
salt and pepper to taste

Combine all ingredients, toss, and serve.

By combining the tops of vegetables with the bottoms of vegetables we deliver our bodies the whole food and receive the inhibitors which make us not feel hungry. This works with radishes exceptionally well, beets too, then cabbage and onions or potatoes and kale are reasonable facsimilies.

3CHEESE LASAGNA
1 box lasagna pasta
1 lb. ground beef
1 lb. brick Mozzarella cheese
1 (16 oz.) sm. curd cottage cheese
1 med. size Ragu sauce
Parmesan cheese

Brown ground beef and drain; add to Ragu sauce and simmer for 30 minutes. Remove from heat and cool. Cook pasta according to package directions and drain. Grease bottom and sides of a 9x13 pan. Layer ingredients in this order: pasta, dotted spoonfuls of cottage cheese, sprinkled shredded Mozzarella cheese, and meat sauce.

VEGETARIAN CHIMI CHANGAS

2 cloves garlic, chopped
10 medium mushrooms, sliced
1 large green pepper, sliced
1 medium-large onion, sliced
1 15 oz can black beans
1/2 cooked white or brown rice
1 cup mozzarella cheese, shredded
10" tortillas
cooking oil
garlic powder
black pepper
crushed red pepper
onion salt

In a frying pan saute garlic cloves, mushrooms, green peppers, onions until soft but still slightly crisp. In a bowl mix cooked rice, black beans together. In another pan heat about 1/2" inch of cooking oil. Warm the 10" tortillas in the microwave until soft. Place a 1-2 large spoonfuls of rice and beans, top with a large spoon of vegetables, and sprinkle with mozarella cheese. Season to taste with garlic powder, onion salt, crushed red pepper, and black pepper. Fold in the edges tightly, and place folded edges down in hot oil. Brown each side until golden brown. serve on a bed of lettuce and tomatoes topped with guacamole, sour cream and salsa. Very tasty!!


SPICY VEGETARIAN CHILE

1 to 5 habanero peppers (your heat preference)
4 carrots
2 stalks of celery
1 granny smith apple (takes the heat off the habanero)
1 red onion
½ spanish onion
2 to 3 cloves of garlic / add more if you wish
4 tablespoons olive oil / more or less, up to you
1 28oz can tomato sauce
1 6oz can tomato paste
2 15oz cans diced tomatoes
1 can red kidney beans
1 can black beans
1 can pink beans
4 tablespoons black pepper / or to taste
4 tablespoons salt / or to taste
8 tablespoons chili powder / or to taste
2 tablespoons cayenne pepper
6 tablespoons of sugar (takes the acid out of the tomato)

Peel then grate the carrots with the large end of the cheese grater. Do the same with the celery (don't peel me) and the Granny Smith apple.
Dice the onions and slice the garlic. Remove seeds and chop the Habanero peppers into small or large pieces, your preference.

Brown the garlic and the onions for about 7-10 minutes. (Note: be careful not to overbrown garlic!)

Add the grated carrots and celery and cook for a few minutes more.

Add spices, beans, tomato sauce and tomato paste. Let the paste dissolve into the sauce then add the sugar. Then add the chopped Habaneros and simmer for 20 minutes.

If you are using 5 this chili is super hot. If you like it this way forget the Granny Smith. Add the Granny Smith apple and cook for 10 minutes more. The Granny Smith gives it even more body and a thick Chile results.

I always get the morningstar hotdogs and chickn patties or the fake hamburgers they sell. Boca is good too, It just depends on which one is on sale, that's the one I get. I don't like vegetarian food and I've been one for almost ten years. I only get a 30 min lunch so that's what I do for lunch every day.

i make a vegi wrap with four squares of wax paper between the wheat wrap and veggies so when you're ready to eat it, you can just pull the pieces of wax paper out and the wrap is dry (as opposed to being soggy, yuck) things to fill your wrap with, romaine lettuce, arugula, cheese, green peppers, tomatoes, and some hummus. plus a little artichoke never hurt anyone. for desert, a 1/4 sheet of puff pastry (buy it frozen in the store). a piece of chocolate and fruit for the center of the square, brush with beaten egg, pop it in a 350 degree oven until it turns golden-brown (depends on your oven) and you have an easy, ooey gooey desert. yum. but i tend to eat them for breakfast.

Tofu Veggie Salad

INGREDIENTS
1 pound firm tofu, crumbled
2 carrots, grated
1 cucumber, cleaned and diced
6 green onions, chopped
2 cups fresh peas
1 (2 ounce) can chopped black olives
1/4 cup teriyaki sauce
2 tablespoons Dijon-style prepared mustard
DIRECTIONS
In a medium size mixing bowl combine tofu, carrots, cucumber, green onions, assorted vegetables, black olives, teriyaki sauce and Dijon mustard. Mix well

I pack my and my boyfriends lunch for school. He gets a PB&J sandwich. For myself, I made a soy cheese and "bologna" (textured soy protein) sandwich with tomatoes and lettuce. My lunches are usually accompanied by pretzels and a cereal bar (if vegan, check the ingredients. In my experience, I find store brand stuff to not have animal derived ingredients in it versus popular brands).

Pasta salad with peppers and sweet corn in. Home made cheese and onion pie. Jacket potato with beans there is loads and loads of stuff. Cheese sandwiches the list is endless!!

Umm... vegetarian food?? Normal lunch items minus meat? Wholewheat pitta stuffed with hummus and roasted red peppers with rocket.

mix some sage and onion stuffing up then boil some veg anything you like when veg is soft mix together with your stuffing them make them into burger like shapes put in oven on 200 fan oven or gas mark six for about 25 Min's turn them over half way through. my daughter loves these.
