couscous is rather simple to make honestly. and it's especially flavorful when you use chicken broth instead of water for the cooking liquid.
All you have to do is add half the amount of couscous to te amount of boiling liquid. Then turn off heat and cover. Let stand for 5 minutes, then fluff the couscous with a fork.
It's great... if you want you can season with rosemary, and garlic for a flavorable side dish. ENJOY!

Moroccan Cheddar Couscous
1 Tbsp. olive oil
1 medium red bell pepper, diced
1/2 cup chopped onion
2 cloves garlic, minced
1 can (14-1/2 oz.) chicken broth
1 cup couscous, uncooked
1-1/2 cups (6 oz.) Sharp Cheddar Shredded Cheese, divided
2 Tbsp. chopped fresh cilantro
Heat oil in large skillet over medium heat until hot. Add bell pepper, onion and garlic. Cook 6 minutes or until vegetables are tender, stirring occasionally. Add broth; heat to a boil. Stir in couscous; cover and remove from heat. Let stand 5 minutes or until broth is absorbed. Fluff couscous mixture with a fork. Stir in 1 cup cheese. Sprinkle with remaining cheese and cilantro.

Crazy as this sounds, as an accompaniment to baked chicken, etc. I found that cooking couscous in spicy V8 (vegetable drink) is unbelievable.
Obviously cook it in a teflon coated pot, but the spicy tomato flavor really provides a decent alternative.
Horrible to say, but to bring out the flavor in couscous. you always need to add probably a little too much salt. The V8 is notorious for having a little too much salt, so you shouldn't have to add anything.
Doing it this way also provides an alternative dish to your vegetarians in the group.

Couscous is great! I make the whole wheat version instead of rice.
The majority of my couscous recipes came from www.CookingLight.com.
The Chicken Tangine was my first introduction to couscous and I have been loyal ever since.

Don't make the mistake of using water. Use bouillon. What a difference. With water it tastes like cardboard, with bouillon(chicken, beef) cook with vegetables it is simply divine.
