Yeah, its coz of the Oriental Spices.

If you buy the readymade pack of curry adders in a shop you will find all sorts of spices ranging from Turmeric (mostly for color) and other stuff which include Ginger and Garlic paste.

As you well know that the paste needs to be fried before you add everything, so it gives it a brown look and hence the color.

Nothing else tastes like an Indian Curry !!

It looks to me you are pretty vague...

Curry is a terms that actually means ... gravy. Or to say it better "The word ''curry'' is an anglicisation of the Tamil word ''kari'' that literally means "sauce laced with combinations of spices" (DeWitt and Gerlach, 1990 : 204)."...

so, if a curry looks like ingredients in a sauce, that is because that's what it is!!!

Not only indian curry anything asian / chinese also are fully spicy and hot and are mostly gravy unlike western food which is mostly dry and bland to taste. The reason is the tropical climate which neccesitates more liquid and the spices & chillies though hotties really cool the person up.

That's the way a curry looks because that.s the way it.'s made & has been so over the years.Looks like you would rather have it look not-so-curry like.but sorry as i said it has been this way for so long & is not likely to change. My suggestion would be forget the curry & concentrate on a dish that is more appealing to you.
