I work in a nursing home kitchen and the way we keep our burgers hot and juicy is to let them lay in a pan of beef broth. That way they soak up the juices from the broth which actually makes them taste better. This is just one idea however. I'm sure there are many others.

If you are going to have the food out where guests can serve themselves, a chafing dish may be you best solutions. The burgers may dry out a little and 3 hours is a long time to have food set out for only 60 people.
If you are serving the guests, keep you cooked patties in a pan covered with foil and keep it in a warm oven until you are ready to serve it.

I'd place the burger in the bun and keep the entire thing wrapped in foil in a warm oven. If, however, you want to have food out for the three hours you may want to rent steam trays from a catering place or rental place.

Did this for a large scouting event. We grilled the burgers, put them on buns, wrapped in foil then stored in coolers lined in foil. This worked great!! Food stayed warm for hours. Just put all of the condiments (ketchup, mustard, relish, onions, lettuce, pickles, mayo , cheese) out on a table along with chips, salads etc and have a nice evening with your guests.

I cover mine with foil and leave them in a warm oven. Just warm enough to keep the heat where I need it to be. If it's too warm, they can dry out!

You should not be serving burgers than. You need to serve a casserole dish that will tolerate the 3 hour grazing period of your guests. Also, they can reheat (microwave) the dish without the taste or consistency changing. Like reheating burgers will only make them hard, flavorless, dry, etc.

i wouldnt be serving something like that for that occassion but if u must.. maybe in the oven maybe with a bowl of hot water at the bottom so there is a little humidity in there?
if theyre eating over a 3 hour period, its obviously not a meal, so why dont u find a lot of different finger foods that you can put out for them to eat? for example, things that are quick to cook and easy are cocktail spring rolls, those little triagle pastry things with vegies in the middle, chicken nuggets, dim sims, little rice paper rolls with shredded chicken and vegies inside, chicken tenders with different dipping sauces, stuff like that. easy to make, easy to clean up, easy to eat with a drink in your hand!
