Specifically, what are some tasty and healthy gujarati foods?

Their dhals (lentils) are nutricious and good. So also something called Kadhi made of beaten yoghurt and chick pea flour. Dry whole wheat chappatis with a minimum of butter are a good alternate to rice or bread.

Almost all Indian foods are healthy... stay away from deep fried dishes (samosas, pakoras ,etc.). And avoid cream based sauces (anything that says "malai or makhani".

The best Indian food is dal (high protein .. low fat) and chappatis (whole wheat flatbreads).

every region is covered here...as far as "healthy" is concerned...most Indian dishes are made with good carbohydrates...I guess curb yourself from the recipes
that call for heavy creams or all things fried.

I do this at home. Instead of the butter, I use about 2 tablespoons of Extra Virgin Olive oil. I think it tastes better and is better for you.
