I just saw a buttermilk pancake ready to mix at the supermarket. Look for Pillsbury brand and it says just add water. I checked ..there is no eggs in the ingredients.
BTW, if you do a search on the internet using "eggless pancakes" you will find lots of websites.

VEGAN WOLF RECIPE COLLECTION
Waffles or Pancakes
Cholesterol Free Vegan Recipe
Waffles or pancakes
Combine:
21/2 C flour
2 C soymilk
3 T oil
1 T baking powder
2 T maple syrup (optional)
2 T ground flax (optional)
2 T sugar
1/4 t salt
1 t vanilla
Stir well
Change ingredients to your preference.
Cook in waffle iron or on griddle...
Serve with vegan margarine and real maple syrup,
berries, applesauce, chocolate syrup...

TIPS
When cooking for guests I make a big batch of the basic recipe for pancakes
and have bowls of optional ingredients next to it.... Ask the guests what they want
and sprinkle it on after you ladle onto the griddle, or mix gently in a bowl before ladling.

Yes, buy Vegan Feasts by Rose Elliot it's got a brilliant basic batter in it which I've used for the last couple of years. The best thing is they flip really well and never stick! I'll add it in an edit if I can get my hands on it tonight.

Most of the time just omitting the eggs and adding a bit more liquid works just fine.

Flour and sugar in a bowl, (or no sugar for savoury ones) add milk, and whisk, keep adding milk until you have a running consistancy. Then add a little melted butter. Dont fry, just cook on a non stick pan. Eat as normal pancakes.
