I'm Italian & love, love, love Italian food. I'm always looking for a great Italian recipe. Do you have any to share? I'm looking for actual recipes, not your favorite Italian foods. Please share if you have a tasty one.

I like to make an Italian sausage pasta dish. I cut up the sausages and cook em. I add mushrooms, red yellow and green peppers. Italian seasoning, onion powder and garlic salt voila! I guess it would taste even better with a real clove of garlic... I cook up whatever pasta I have and add butter and some Italian seasoning with Parmesan cheese. It's so good, but even better the next day.

I have a great one, but be reminded that true Italian recipes are more then likely family recipes. One of my favorite easy summertime/or when ever is.

Grilled Portabella mushrooms.

Ingredients: Package of Portabella Mushroom (make sure they are very firm as when you cook they could fall apart)

Fresh Bochenchini (Mozzeralla the ones in the water)

Red roasted pepper (you can purchase jarred already to save time)

Olive oil
Garlic
(any other italian seasonings you may like to add to taste)

First soak your portabellas in some water to make sure all the sand is out. (15 minutes) then place them on a napkin for about teh same time so that they can dry.

In that time frame you can prepare the other ingrediants. Slice your fresh mozzeralla into pieces .


Take your olive oil and mix together pieces of your chopped garlic and other italian herbs. Basically creating a dressing minus the vinegar.

Get your mushrooms and brush them once with olive oil. Put them in the broiler or grill (low flame) for about two minutes on each side.

Next take your red peppers and place them on top and last the pieces of fresh mozzeralla.

Brush your mushrooms once more. Keep and eye on them, they take about 5 minutes and thats it.

It is like a nice lunch/or side dish..easy quick and delicious.

Meatballs: 1 pound ground beef
1/2 pound ground pork
1/2 pound ground veal

2 eggs
1 cup seasoned bread crumbs
2 tsp.salt
1 tsp.blk pepper
2 tsp basil
2 tsp garlic
1 tsp oregano
1 tsp sugar
3 tablespoons Parmesan cheese

Mix all together, refrigerate at least 6 hours. Roll into balls and fry in hot olive oil till all sides are browned. De glaze pan with red wine (1 cup) reduce to 1/3. Finish with your tomato sauce recipe

I lived there for many years, and this is my favorite.


The Perfect Italian "Base"

saute all of the following in a big pan:

- chopped ripe Roma tomatoes
- pressed garlic
- a large glug glug of olive oil
- a bit of chopped baby eggplants
- chopped RED onions
- a bit of grated carrots
- lots of sliced fresh mushrooms
- fresh basil
- chopped fresh ITALIAN parsley
- a bit of sage
- a TINY pinch of cumin
- no salt
- some white pepper
- a generous splash of Vodka

Just cook the hell out of it -a lot or a little LOL .......... This can be used on pasta, roast chicken, to make soup, over rice and steamed veggies, slathered on bread, the possibilities are endless.

Have you ever made Arancini di riso?
I use Arborio rice 3 cups
1 egg
Parmiggiano Reggiano
some salt& pepper
mozzarella
bread crumbs
oil for frying

first cook the rice and drain ,when cooled add 1 egg beaten ,the Parmiggiano cheese ,salt and pepper, shape into balls tuck inside a cube of mozzarella cheese and roll to seal the cheese inside, on a plater put the bread crumbs and roll your rice balls until coated ,at this point you can refrigerate them until ready to use or you can fry them in a large skillet serve on a bed of greens ! My guest always look for these when they come over for dinner!

Shrimp or Chicken Alfredo
(for 1)
* fresh pressed garlic (garlic powder works)
* 1/4 stick butter
* about 6 oz fettuccine noodles (cooked and cooled and rolled in olive oil to prevent sticking)
* 6-8 oz uncooked shrimp or chicken cut in small pieces
* about 1/2 -3/4 cup flour
* 1/8 - 1/4 onion diced finely
* sour cream
* milk
* white wine or cooking sherry

melt butter add onion and wine/sherry and some garlic to taste let simmer med/low heat but not brown until onion clarifies

add chicken or shrimp cook over med heat stirring constantly until shrimp whitens and curls or chicken is cooked throughout reduce heat to low med/low

add flour a little at a time to make a rue - a thick paste made by adding flour to a small amount of liquid - add milk stirring constantly to make a thick gravy add noodles and stir - if to thick add a small amount of milk or wine to thin - DON'T STOP STIRRING AFTER YOU START ADDING FLOUR or it will burn



Garlic cheese bread

preheat oven 350

garlic powder
butter
french bread
shredded mozzarella
grated Parmesan

butter both sides of french bread sprinkle garlic powder Parmesan and mozzarella
bake 7 -14 min till cheese to starting to brown

OMG!!! I am JUST LIKE YOU!!!! I am italian and I LOVE italian food! Here is an AMAZING recipe.

Italian Cookies
"This cookie recipe has been handed down to me from my Nana. It has been in the family for at least 4 generations."

INGREDIENTS
3 cups all-purpose flour
3 eggs
3 teaspoons baking powder
1/2 cup white sugar
2 teaspoons vanilla extract
1/2 cup butter, softened
DIRECTIONS
Preheat oven to 350 degrees F. Grease cookie sheets.
Cream the butter. Add in the eggs, sugar, and vanilla.
In a separate bowl, stir the flour and baking powder together.
Add flour mixture to butter mixture. NOTE: If batter is too dry, add a bit of milk.
Use hands to shape pieces of dough into loop-shaped cookies.
Place on cookie sheets and bake 8 to 10 minutes.
Cool and frost.

Italian-Style Skillet Pork Chops
* 1 clove garlic minced
* 6 cups hot cooked med tube-shaped macaroni (3 1/2 cups dry)
* 1 tbsp vegetable oil
* 6 pork chops, 3/4 inch thick
* 1 jar (28 oz) spaghetti sauce with fresh mushrooms
- In 10-inch slillet over medium-high heat, in hot oil, cook half of the chops 10 minutes or until browned on both sides. Remove, set aside.

- Repeat with remaining chops. Pour off fat.

- Stir spaghetti sauce into same skillet. Heat to boiling. Return chops to skillet. Reduce heat to low. Cover; cook 10 minutes or until chops are no longer pink, stirring occasionally.

- Serve with macaroni or other pasta


Mostaccioli
Equipment you'll need: 2 large saucepans, l lid, colander, can opener, liquid
measuring cup, large slotted spoon, solid (nested) measuring cups, measuring
spoons, wooden spoon, ladle, and serving platter

Safety: Ask an adult to add mostaccioli to the boiling water and to drain
after cooking. The hot water and steam can cause painful burns.

Recipe
1 28-ounce can crushed tomatoes
1 tablespoon honey -- We dont use this.
1 tablespoon Italian seasoning
1 tablespoon unsalted butter
8 ounces mostaccioli
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
Grated Parmesan cheese or regular cheese to top.

Sauce
1. Add crushed tomatoes, seasoning and honey to a saucepan.
2. Mix with a wooden spoon and bring to a boil.
3. Immediately reduce heat, add butter, cover and simmer until pasta
is cooked.

Pasta
1. Bring 8 cups of water to a boil.
2. Add mostaccioli and wait for water to return to boiling point.
3. Cook until "al dente" (firm to the bite), approximately 10 to 12 minutes.
Stir occasionally.
4. Remove from heat and spoon into a colander to drain.

Serve
Using a large slotted spoon, place pasta on serving platter, ladle sauce over
and sprinkle with Parmesan cheese.

Yield: 4 servings.



Italian Meat Loaf
2 Packages (12 ounces each) extra-wide noodles

2 Tablespoons butter or marg. melted

1 Can (15 ounces) Original sloppy joe sauce

2 Pounds ground meat or turkey

1 Cup dry bread crumbs (Try Italian or garlic and herb)

2 Eggs, beaten

1 Tablespoon dried, minced onions

Directions

1. Preheat oven to 375 degrees

2. Cook noodles according to package directions, drain, and toss with
butter. Keep warm.

3. Set aside half of sloppy joe sauce to brush on patties. In a large
bowl, combine remaining sauce with remaining ingredients, mix with
fork. On large, greased baking sheet, shape meat mixture into 8, 1
inch thick, oblong patties. Brush reserved sauce over patties.

4. Bake 20 minutes or until no longer pink in the middle. Serve
patties over noodles
