Hi, my son, (4th grader), has to do a project where they research a country, do a report, and then make a dish to serve to the kids in the school..He was given the country India...I found that mangos are the fruit for that country...thought about serving mango ice cream...thinking that all kids love ice cream!! Would this be an acceptable dish, or do any of you have any other suggestions??

mago ice cream is a good idea- only problem. it isn't all too available in the us. also there is the mess/ melt factore. a simple recipe for lassi, is as follows

I know not all kids love veggies but this will surly change their mind!!!
Indian Carrots, Peas and Potatoes
"This is a slightly spicy Indian side dish my family loves. The flavors go very well together. Enjoy!"

INGREDIENTS
5 tablespoons vegetable oil
1 onion, chopped
1 tablespoon ground cumin
1 teaspoon ground turmeric
1 tablespoon ground coriander
1 teaspoon chili powder
1/2 teaspoon salt
6 potatoes, diced
1 (10 ounce) package frozen mixed peas and carrots
3 tablespoons water, or as needed
DIRECTIONS
Heat the oil in a large skillet over medium-high heat. Add the onion, and season with cumin, turmeric, coriander, chili powder and salt. Cook and stir until onion is browned.
Reduce the heat to medium, and stir in the potatoes, carrots and peas. Stir to coat, then cover and cook until potatoes are tender, about 20 minutes. Stir occasionally, and add water if necessary to keep food from sticking to the pan.

Zesty Masala Peanuts

Tired of eating the store bought peanuts ? Well, try this zesty recipe for peanuts. This is a very popular recipe for peanuts in India. You can make these ahead of time.

Best of all they are so different that your guests will wonder where you got them from and yearn for more ! Your party will be a hit! Serve them at YOUR next party.

1 cup Salted Roasted Peanuts
1/2 cup Gram flour
1/4th cup Rice flour
1 1/2 teaspoon Chili powder
1/4th to 1/2 teaspoon Salt

1. Sieve gram flour and rice flour through a fine sieve.
2. Mix gram flour, rice flour, chili powder and salt together in a bowl.
3. Stir in the peanuts and slowly add four to five tablespoons of water. The peanuts get well coated with a thickish mixture.
4. Heat oil in a wok / kadai and drop the peanuts into the hot oil. Separate the peanuts that clump together. Deep fry over medium heat till the peanuts are golden brown. Allow to cool and place in an airtight container.


Grilled Pineapple with Cool Whip

Store-bought pineapple rings in a can.

For the sauce:
Add the juice from pineapple tin
1 tablespoon brown sugar
1/2 tablespoon soy sauce

Grill pineapple rings on medium hot coals and brush with the sauce. Cook until rings are hot and tender. Serve with a big dollop of Cool Whip.

Great and quick dessert !

If you were willing to cheat a little, and you have a good farmers market or well stocked grocery store nearby, you could get some different kinds of Naan and assorted chutneys. The kids could mix and match and it's an easy way to introduce new flavors. Cut the Naan into small pieces that they can dip into he chutney, now what kid wouldn't be up for that??

Great website! If you live by an Indian store, take a look. They have plenty of ideas (not sure how much work & effort you want to put into this project). But they have plenty of sweets & savories (even mango cookies!).

all kids love pakoras (bhujis) or even papad (whole foods or even trader joes sell them like potato chips in a variety of flavors).

it's easy & no work involved!

you could make a type of Lassi - a yogurt drink similar to a milkshake. you could add mango or other fruit if you wanted. Very traditional and super yummy and maybe not as messy as ice cream?
