Fajitas- beef (flat flank steak) or chicken (grilled)- even shrimp mostly served with grilled bell(green) peppers and carmilzed onions. You assemble them in the tortilla, add as many sides as you like to eat.
Tortillas can be either Flour or Corn- so ask for one of each in the meal, they taste different. The most popular is flour (pan size) the most traditional is corn (smaller- hand size)
What you are describing is a Flauta. said like-[Fl-ouh-tah)
Shredded or Ground meat, long tubular-thin and very deep fried. Crispy on the outside, served 2-6 per plate.
They are served plain. I prefer a Chili sauce and melted cheese on them or with sides: sour cream, avocado or shredded lettuce/tomatoes
A chimichunga- is a puffed tortilla filled with meat/cheese and deep fried, covered in melted cheese. The dessert version- Sopaphia- puffed tortilla with cinniman/sugar and honey on top.
A burrito- tortilla rolled/wrapped filled with beans, cheese and meat of choice, all items inside are cooked and the tortilla is just wrapped around it. Commonly not covered with anything, eaten by holding it in your hand or if on a plate- chili or cheese sauce can be added.
Exception to that is the- Fried Burrito- it is mostly bean,cheese and meat, and mostly it is just bean. It is often as (three fingers wide and as long as the totilla, with a crispy outside. Very popular for the younger "Fried food" crowds, its very cheap and can be carried in your hand.
Tamales- cornmeal pressed with shredded meat inside, sometimes they can be dessert ones (yummy), they are almost aways in a corn husk when served to preserve the shape, if not, it is on a plate with a chili sauce or plain.
Enchiladas- again a corn meal or corn tortilla with a melted cheese, chili, bean and meat inside. These are moist and must be served on a plate often times with cheese on top.
???(forgot name) -A fried flat tortilla, with beans, cheese, lettuce/tomatoes. Its little brother is the Nacho- a totilla chips with bean, cheese and meat. This is an apitizer or an entree.
Most dishes are served with Spanish Rice and Pinto beans(re-fried- mixed with lard-yummy and gassy) on the side.
Come to Houston sometime and gain 20 # on great Mexican food. We are a multicultural city.
Recipes.com have great ones you can cook. Ask for the Flank steak from your butcher it is not a fatty piece of meat and get a larger peice they reduce and need to be tenderized and marinated before grilling. If its chicken, then take a mallat to it, and flatten it, then grill and slice. Long Thin strips is the key.

You mean the chimichangas right? Those are the fried tortillas with chicken and tomatoes and cheese inside and then you get served with sour cream, guacamole, and spanish rice.

Yes, chimichanga is what they are called. Enchiladas are stuffed corn tortillas with a sauce.
