I know that Yellow American cheese is dyed with a natural ingredient called annatto, but why do they do it?

They do that because humans prefer to see cheese yellow its all a naturel trick of the mind after all they couldent sell whight Yellow Cheese

American Cheese cannot be compared to say a Tillamook or Colby. American Cheese is processed while real cheeses are Aged. All cheese would be white without the annatto spice mixed in. It just creats differences in the various cheeses out there.

Milk contains small amounts of beta-carotene, the natural coloring substance found in carrots, pumpkins, etc. Amounts of beta-carotene will vary depending on a cow's diet, but even cheese that looks white compared to the yellow, color-added cheese is actually a very, very pale cream color rather than a stark, pure white. Yellow coloring is added to make the cheese seem richer than it already is, more appetizing.

To give the cheese some colour!
instead of the usual white ,it makes cheese tray more attracting to the eye!

hmmm maybe its to make it look more appealing to the eye but what ever the reason. i love cheese!!! just thought you would like to know that.
