Very Nice. I'd say you should start out w/ finger foods such as BBQ wings,sandwiches,ect then go into dinner which would be chicken franchise or eggplant parmigiana ...a nice tasty wine and some nice veggies pasta and maybe a house salad.. Maybe even choose a dish she is awesome at making and have that that way it'll give you a idea of what she is like at cooking and who knows maybe you'll find a new dish you'll like that you've never had before.. even salmon and steak would be a twist in a traditional rehersal dinner

You didn't say what time of year you were getting married, but I shall assume that its early summer since you're getting married on the beach. You also didnt' mention how many guests are in your party or if they have dietary considerations. A nice rehearsal dinner might include grilled chicken and chateaubriand,
a nice spinach salad with strawberries, candied walnuts, gorgonzola cheese and a nice light vinegrette, a potatoe or rice dish, such as baked potatoe casserole or wild rice, or cheesy twice baked potatoes that can be reheated at a later time. You'll want to have a cheese board with some great bread and crackers, an olive selection, shrimp and cocktail sauce, for possible appetizers. Dessert might be upscale cupcakes (very fashionable these days!), chocolate fudge with cream cheese frosting and candied violets or some such.

Definitely pick some of your favorites that she makes and stick to what she does best! Or pick one and ask her to use it as the main idea and then build a menu off of it. Use one of the dishes that she loves to make to guarantee the guests will love it instead of trying something new for such a big night!

If you contact restaurants that do catering or banquets most of them will fax you their banquet menus. This can be a good source of ideas. Or just google recipes online. Good luck!
