The thing about strawberries is that they do not mix well with water. When you bring them home, DO NOT WASH, but do refrigerate them. Dip them within a day or two after purchase. When you are ready to dip them in the chocolate you can rinse them briefly. DRY THEM thoroughly, one at a time, by hand, just patting them dry! Let them sit for a few minutes, then dip in the chocolate. DO NOT refrigerate them after you dip them.

never refrigerate chocolate or chocolate bars if you could, just keep them in a cool dry place to prevent the sweating or actually the parting of oil from the other ingredients. once refrigerated, serve chocolate to be consummed. i used to have a chocolate shop selling different bars so i would know disaster

actually, i would think it's the exact opposite. either keep them cold after dipping them or dip them when the strawberries are room temp. the sweating is condescation, so you have to eliminate that.
