Arroz Valenciana
(Spanish-Style Rice)

2 lb sweet rice
1 vial powdered yellow food colouring
2 chicken legs and 2 chicken thighs
1 lb chicken livers
1/4 lb pork pieces
3 small Chinese sausages (1 pkg)
1/4 cup vegetable oil
1 onion, sliced
2 cloves garlic, minced
Salt and pepper
2 cups green peas
1 cup raisins
6 hard-cooked eggs, sliced

Rinse rice in large bowl; drain and transfer to large saucepan. Add
just enough water to cover. Add food colouring and mix well. Cover and
bring to boil over high heat. Reduce heat to low and simmer, covered,
for about 20 minutes or until tender. Fluff with wooden spoon.

Meanwhile, cut chicken into chunks, removing skin. Cut chicken liver
and pork into chunks. Slice sausage thinly. In large saucepan, heat
oil over medium-high heat; sauté onion and garlic until softened and
starting to brown. Add chicken, chicken liver, pork and sausages;
season with salt and pepper to taste. Cook, stirring often, until
chicken is no longer pink inside and just a hint of pink remains in pork.

Stir chicken and pork mixture into rice; mix well to combine. Stir in
peas and raisins; heat through. Serve on platter garnished with slices
of hard-cooked egg.

Spanish rice
* 1 1/2 cups rice
* 2 cups chicken broth
* 1 cup plain tomato sauce*
* 3 cloves finely chopped garlic *
* 1/4 of a medium onion*
* 2 tablespoons oil
* 4 heaping tablespoons of finely chopped parsley (optional)


PREPARATION:


In a medium sauce pan, heat oil over medium heat. Add in the fresh garlic
and onion. Saute for 1-2 minutes until softened. Add in dry rice. Stir for
about 5 minutes until rice becomes a golden brown color.

Add in broth and tomato sauce (Slowly into rice, not directly onto hot pan!)
Add in the parsley if you're using it. Stir it up and bring to a boil. Once
it starts boiling, turn the heat to low and cover. Let it simmer for 20
minutes and fluff with a fork.

*If you don't have fresh garlic or onions on hand you can use the equivalent
in powder form. Do not saute the powder, just skip that step and add the
garlic powder and/or onion powder when you add the liquids. If you don't
have tomato sauce you can use unseasoned stewed tomatoes, or canned diced
tomatoes with their liquid.

Recipe could easily be found on the internet; I will give you the main secrets only, and if you are medium cook could imagine the rest...
1- In addition to the garlic and onion fried on the pan, put whole gloves of unpeeled garlic during the cooking.
2- paella means in Arabic 'leftovers', which historically was made by the Arab servants after their masters are full in Spain, so a true paella should contain all sort of meats that you have from the day before 'after thanks giving', or after a BBQ party'
3- Some hot chili is a must.
4- Basic steps:
Fry onion and garlic.
Add chili and meat.
add spices 'saffron 'or extra tomato past if not available', pepper, cinnamon, salt
add any vegetables you find in the refrigerator.
add rice 'note that rice should not over come the other ingredients'.
Cook in a large not too deep pan.
Add hot water and when liquid almost gone turn the heat to the very minimum and cover until fluffy.

spanish olives and capers
salt to taste (2 tsp or so)
pepper to taste

Add cilantro let it mingle there for a sec or two Saute for 1-2 minutes until softened. add salt pepper,Add in dry rice. Stir for about 5 minutes until rice becomes a golden brown color.
Add in broth and tomato sauce (Slowly into rice, not directly onto hot pan!) Add in the parsley if you're using it. Stir it up and bring to a boil. Once it starts boiling LEAVE IT ALONEwhen the water is almost all gone then turn the heat to midlow, stir dont mash and cover. Let it cook for 20 minutes uncover and fluff with a fork.

Spanish Rice

3 tablespoons cooking oil
2 cups uncooked rice
1/4 cup chopped bell peppers
1/4 cup chopped onions
5 cups water
1 tomato, chopped
1 teaspoon salt
2 cloves garlic, chopped
1 teaspoon cumin seeds, crushed


Fry rice, pepper and onions slowly until yellow in a heavy pot.
Add water,tomato, and spices.
Bring to boil.
Cover and simmer until rice is tender and liquid is absorbed,approximately 25 min.
Variation: Subtitute 1 can (16 oz.) tomatoes for fresh.
Use 2 teaspoons of chili powder.
or use one onion and one bell pepper.

Here is my delicous recipe. It is more like the rice they serve in Mexican restarants, NO tomato sauce!!!!!!!!!!!!!!!

Saute about 1 cup of rice in a small amt of oil, (3-4 Tablespoons) Add 1 large chopped onioon, 2 diced cloves of garlic, and a couple of whole jalepens. Saute for 2-3 minutes. Add 1 1/2 teaspoons mustard, 1 Tablespoon Worchetershire sauce, and about 1/2 can chopped tomatoes. Add 1 cup chicken broth, bring to boil, turn down heat and simmer till done. ( about 20 min, for all liquid to evaporate) Adjust salt and eat!

Fry 4 slices of bacon. Remove bacon. In bacon oil, pan fry one table spoon of onions and one table spoon of bell pepper. Place onion and pepper with bacon grease in a pot with one cup of white rice, 16 oz can of chopped tomatoes with liquid plus 4 ounces of water, a tablesopon of chilli pepper, a teaspoon of salt and a tablespoon of butter. Briing to a boil, cut down to low and cook 15 minutes. Crumble bacon on top and eat. Can you say ole'?

now in days there is beauti call automatic rice cooker you just add all your condiments to make it chinese rice, creo rice , spanish rice.... just look on yahoo search for spanish rice and it will give you all kinds of spanish rice to choose to from... you see the problem with spanish rice is that it has so many influences from all kind of culture from cuba, central america south america afrika etc...etc..spanish rice is made different in all this countries...but still you can make spanish rice mexican style which is the most popular in the states.........good luck.....
