Scrapple is most like sausage, although not entirely- it is a breakfast meat commonly eaten in the eastern Pennsylvania area. It is very common to find it on the menu in Philadelphia. Scrapple is made of whatever is left from the pig- the scraps left over that doesn't go into anything else. Those scraps are ground up and combined with cornmeal to form a loaf, and pieces are sliced off and fried up in a pan.

Scrapple is also called head cheese. It's made by taking the head of an animal, boiling it to cook the flesh and to extract the gelatin from the bones, and then removing all of the bits of meat from the skull, adding them back to the boiling liquid, and chilling the whole. It has it's North American origins in the Germanic and Pennsylvania Dutch populations of the industrial north-east.
I suppose that the best comparision would be to an aspic, a classic French dish.

yes, I've eaten it. A friend shared it with several of us at college. He served it sliced & fried. I recall it as being a little more fatty than your average sausage; more tender than Spam; a little salty. It didn't taste bad; probably would have been good with BBQ sauce or potatoes. However, since it isn't kosher (something I didn't know then !), I'd now recommend against eating it. sorry.

Yes. Yum! It is scrumptious. Imagine a cornmeal pancake with sausage mixed in. Enjoy with ketchup. Some people eat it with syrup but they are weird.

I have eaten it. It's an acquired taste. It's similar to souse or hog head cheese without the pimentos and stuff.
