My favorite is Elizabeth Andoh. Her web site is below. I have most of her cookbooks and use them regularly. She's a Japanese-American, who returned to study, fell in love, and stayed in Japan. She writes often for the New York Times, and other US publications, and she's often speaking in the US. All this makes her the best Japanese gourmet.

well it's a lot of but i told u that all of them are xtraordinary delicious
udon, teriyaki, yakiniku, okonomiyaki...
