Vegetarian Sheppard Pie
4 medium potatoes, peeled and quartered
1/2 cup potato water
1/4 teaspoon salt
1/4 teaspoon onion powder
8 ounces black beans or
1 1/2 cups garbanzo beans, cooked
1 cup frozen corn, thawed
1 cup frozen peas, thawed
1/3 cup peanut butter
1/2 cup water
paprika
Preheat oven to 350. Place potatoes in a large saucepan, and add just enough water to cover. Boil for 15-20 minutes, or until tender.
Drain potatoes, reserving liquid. Mash cooked potatoes with hot water, salt, and onion powder.
Add additional liquid if desired. Set aside. Combine beans, corn, and peas in a 9 inch pie pan. In a separate bowl, whisk together peanut butter and water, until smooth. Pour sauce evenly over vegetables. Top with mounds of mashed potatoes. Sprinkle with paprika. Bake for 30-40 minutes, or until potatoes start to brown.
Serve hot or at room temperature.

This is a tasty shepherd's pie made with ground beef, mashed potatoes, and seasonings. Scroll down for more Shepherd's Pie Recipes, including several using leftover beef.
1 1/2 pounds lean ground beef
2 tablespoon butter
1 teaspoon Worcestershire sauce
2 eggs, separated
6 tablespoons butter
8 potatoes, peeled, boiled, and mashed
1 cup finely chopped onion
1 tablespoon ketchup
beef broth
1/2 cup heavy cream
1/4 teaspoon garlic powder
Parmesan cheese
Brown ground beef and sauté onions in 2 tablespoons butter until golden. Mix ground beef with onions, ketchup, Worcestershire sauce, salt, and pepper. Add a few tablespoons of beef broth and cook, covered, over low heat for 15 to 20 minutes, adding more beef broth as necessary to keep moist. Beat egg yolks until light, then in another bowl, beat whites until stiff. Beat the yolks, cream, 6 tablespoons butter, and garlic powder into hot mashed potatoes. Gently fold in beaten egg whites. Put meat mixture into a casserole then top with potato mixture. Sprinkle with Parmesan cheese and bake at 350° until potato topping is puffed and browned, about 25 to 35 minutes.

1 medium onion, chopped
2 garlic cloves, crushed
1 lb ground beef
1 (14 ounce) can Italian-style diced tomatoes, drained
1 (14 ounce) can green beans, drained
4 cups mashed potatoes
1 egg white
salt and pepper
Preheat oven to 350 degrees.
Brown meat, onion and garlic.
Drain.
Salt and Pepper meat.
Spread in bottom of 2 quart casserole dish.
Pour tomatoes on top.
Follow with green beans.
Spread potatoes over everything.
Brush top with egg.
Cook 30 minute.
Broil 1 min to brown.
Serve and enjoy!

I am not vegetarian but I think this recipe is better than the ones with meat!!!!
Vegetarian Shepherd's Pie
"This was our first vegetarian recipe and has withstood the test of time, now one of our staple recipes."
INGREDIENTS
2 cups vegetable broth, divided
1 teaspoon yeast extract spread, e.g. Marmite/Vegemite
1/2 cup dry lentils
1/4 cup pearl barley
1 large carrot, diced
1/2 onion, finely chopped
1/2 cup walnuts, coarsely chopped
3 potatoes, chopped
1 teaspoon all-purpose flour
1/2 teaspoon water
salt and pepper to taste
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large saucepan over medium-low heat, combine 1 1/4 cups broth, yeast extract, lentils and barley. Simmer for 30 minutes.
Meanwhile, in a medium saucepan combine remaining 3/4 cup broth, carrot, onion and walnuts; cook until tender, about 15 minutes.
Meanwhile, bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash.
Combine flour and water and stir into carrot mixture; simmer until thickened. Combine carrot mixture with lentil mixture and season with salt and pepper. Pour mixture into a 2 quart casserole dish. Spoon mashed potatoes over lentil mixture.
Bake in preheated oven until lightly browned on top, about 30 minutes.

English Shepherd's Pie
Serving Size : 6
5 large Potatoes
Salt
2 tablespoons Butter/margarine
1 dash Milk/whipping cream
Pepper
1 pound Lean ground beef
1 large Tomato chopped
6 Sliced mushrooms
2 tablespoons Chopped parsley
1 tablespoon Tomato paste
1 dash Worcestershire sauce
1 cup Brown gravy
1 package (10-oz) frozen peas or 1 lb -- peas shelled
Cook potatoes in salted water to cover. Drain, cool and peel. Mash in large bowl with butter, milk and season to taste with salt and pepper. Set aside. Saute beef until browned, stirring to keep meat crumbly. Season to taste with salt and pepper. Add tomatoes, mushrooms, parsley, tomato paste, Worcestershire and gravy. Stir to mix. Add peas and cook about 5 minutes. Turn mixture into casserole. Spread potatoes evenly over meat. Bake at 400 degrees 40 minutes until top is crispy brown.

You cook some mince with onion and gravy, then while you are doing that boil some potatoes, then when they are both cooked put the mince in a casserole dish mash the potatoes then put on top of mince and cook until the top of the pie is goldern. Serve with vegies

mashed potatoes, ground beef and cream corn layered. Those are the main ingredients, you make it to your liking with additional spices. Make the mashed potatoes the way you like and same with the beef, all you need is canned corn. It's pretty simple add salt and pepper and bake in the oven. Yummy!

500gms mince meat
1 diced onion
1 diced capsicum
1 diced carrot
1 diced zuchini
600gms mashed potato
1 cup of cheese
put meat in a large baking dish
cover with mashed potato
sprinkle with cheese....
cook for 1 hr
