Mix some lemon juice(Meyer lemons are best),chopped garlic,chopped fresh basil,fresh ground black pepper and a splah of red wine if you'd like.You can add a pinch of sugar to tone down the flavor if it's to tart for you.Whisk all ingredints together and toss with your salad.Enjoy......

This is a recipe for blue cheese dressing that's free of the ingredients you don't want. If acidity is a problem, you can omit the lemon juice, but the dressing won't have quite as good a taste.

Healthy Blue Cheese Salad Dressing

1/2 cup blue cheese
1/2 cup fat-free mayonnaise
1/2 cup plain fat-free yogurt
1/2 teaspoon Worcestershire sauce
1/2 teaspoon white pepper
1/2 teaspoon dry mustard
1/2 teaspoon garlic powder
1 teaspoon lemon juice

Blend all ingredients thoroughly and chill before using.

Ranch-ish, with fat-free yoghourt and buttermilk?

A creamy honey mustard?

...er, okay. Scrap the vinegar, or, better, substitute with lemon juice.

A very concentrated -- garlicky and lemony -- tzatziki would make a decent dressing, too. With all those restrictions, good heavens, I hope you eat dairy...

And, look outside of the western world for these purposes. I know other cuisines have dressings rather unlike the oil-n-vinegar stuff common to most of us, but none are coming to mind right now. Tamari-ginger-something wouldn't be bad.

this is how I make it:
I make my self a chicken broth from scratch..(no salt added).
Then cool it overnight...then remove all the fat that has hardened.
Then I take about a 1/4 of that broth, add the herbs I like, either dill, or oregano, some dried red pepper, some garlic, some ground black pepper, and lemon juice to taste, and sometimes a pinch of Splenda.
Then I wash and dry my lettuce...put it on a plate, and spritz the lettuce with a bit of Pam, Olive flavor and pour the dressing over it.
It takes a bit of effort, but in time you will have a dressing that is really healthy for you.

I don't think you will find a salad dressing without vinegar or oil. Most dressings are made with one or the other

here's one my mother in law came up with 35 years go. if not more.............Use 1 heaping tablespoon of Mayonnaise, then use 1 tablespoon of mustard and 1 1/2 tsp of milk.....mix together and enjoy! I think this makes 1/4 cup. (she always added 1/4 tsp or less of sugar) You can substitute sweet n low or others if you want...)
You can also add more mayo, or mustard depending on your taste...and depending on how many people will use it on salad.
Sometimes it was just as easy to pour the mixture on the lettuce and mix it all together that way...just a thought

A lot of people use a mixture of olive oil and lemon juice. If you don't want oil, you could try some of that oil spray and lemon juice.

Why don't you try using some juice from lemons,oranges,other acitic fruits with some herbs?
