Sometimes it's because of where the people live or what their religon is. But for other people, being a vegeterian or vegan is a moral descion while others use it to help the environment. (I'm pretty sure it takes a lot more water to make a pound of beef then a pound of bread or something like that) Some people also change their diets for heath reasons- being a vegeterain or a vegan can really improve your health if you stick with it. And finally, some people just don't like meat!

Some vegetarianism is cultural and tradition stemming from a religion. However not many meat centered diets are based on the same reasons.
America and Europe, being especially affluent, have an abundance of meat because the government takes tax money and gives it to companies so that they can raise non-human animals in the most terrible and cruel conditions possible, in order to keep the cost of meat extremely low.
So the result is that there is a lot of artificially cheap animal products and a lot of facts hidden by these industries that produce them. Things such as the truth about where all the meat comes from and how these other earthlings are abused throughout their short lives. So there are some people that eat meat out of ignorance of these things, and some that are veg because they know these things.

Vegetarians come from many places and cultures. Sometimes it's religious, such as certain Hindus and the Seventh Day Adventists. Sometimes it's personal, from experience or knowledge or moral objection. Some people do it for health.
I was vegetarian for 2 years, but stopped because I was too weak and unhealthy. I am now just very particular about the meat i buy, and eat many meat substitutes (they have improved so much since that time).

I'm probably repeating what was already said, but it's because different people believe different things.
Most vegetarians are vegetarian because they sympathize with animals, and they hate the fact that animals, another living creature, must die in order for people to eat. And it's not even necessary for animals to die for us to eat, because there are so many more options available to us nowadays
and people who argue that "we've always eaten meat, why stop now?"
Well, blacks were slaves, why should we have let them not be slaves? Gays weren't acknowledged what so ever, why should we acknowledge them? Women weren't allowed to vote, and were considered property of their husbands, why should we have changed that?
Times are achanging people.
There's no need for people to eat poor defenceless animals now that we have so many more resources available.
(In case you hadn't guessed, I'm vegetarian)

I think vegetarianism for men must have been the natural choice, if you go by the food habit of the monkeys, from whom we are stated to have evolved. Non-vegetarianism must have developed when he took to hunting, after coming to live in the planes. Now, for the food habit is determined by family tradition, religious tradition, and by conscious choice, on moral, ethical and religious grounds.

it is a matter of personal choice ... or
personal need. My brother is a natural
vegetarian, and I - who would like to be a vegetarian -- am non-veg, at least for now.
My body seems to require meat, even though I do not really like it.
So, I am saying that it is according to the needs of each person....

Loosely translated from Haida to English - vegetarian means 'bad shot'
Then those tribal outcasts that could not hit the broadside of a deer banded together because nobody else like them and they became vegetarians.

Different diets exist because people believe different things are important. Some don't think animals are important and so they eat them. Others believe that eating animals causes suffering, so they don't. Others believe that to eat animals causes suffering, but to drink milk or eat the eggs doesn't. It's all a difference in ethical guiding principles.

People make various choices based on morals, health issues, allergies, budget, etc.
In today's world, there are so many things available with the snap of your fingers that you don't need to worry about what you can or can't eat based on location...unless you mean different countries, but those are just ethnic differences.

the habits are mainly due to avilability
with in reach/cost etc.
later civilised world found the food has a impact on your attitude /mentality.
so vegetarians may -repeat may - be soft.
non-vegetarians may be rough-it may be myth.
then comes liking etc.
