Doctors' tested me for HSV1 and HSV2 and both came back negative. Antibiotics decrease the symptoms but can't get rid of it completely. Whenever I don't get enough sleep and my immune system is low, my throat gets really sore, when I get my sleep, it's only slightly sore. Anyone had a similar experience? What was it?

i've had something similar to this for about five years now, except its my lymph nodes that hurt, not really my throat. unfortunately i don't have info to share with you. i've been to three different doctors, been diagnosed with sterp throat (neg lab results), mono (neg lab results), and chronic fatigue syndrome. i think i'm finally gonna drag my butt into an ent and see about having my tonsils taken out.
have they done strep tests or mono tests on you in the past?
i would suggest maybe going to an ent as well.

Do gargling before going to bed everyday. You might be having the habit of consuming food late night and sleeping without gargling. This is one of the main cause of throat infection and cavities in mouth.

Do you still have your tonsils and adnoids? If yes, you may have bacteria in them that antibiotics are not killing. Did they test you for mono? Allergies?

Try taking Zinc vitamin supplements and see if that helps.
